Coconut Curry Shrimp atop Garlic Spinach & Tomatoes

Daily Tidbit:  Put some Ginger in your meal to help prevent migraine pain!  Ginger is delicious and easy to add to lots of quick meals, like the Coconut Curry Shrimp (pictured above) that I made tonight!  Check out the article at Prevention which discusses Ginger's role in managing pain:

Oatmeal with Walnuts

Breakfast: Oatmeal with Walnuts
1/2 cup Plain Oatmeal, microwaved in 1 cup Fat Free Milk
2-3 Shakes Plain Cinnamon
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, Black

a Healthier Taco Salad/ 8 Layer Salad!

Step 1: Refried Black Beans
Step 2:  Tomatoes
Step 3: Cucumbers
Step 4:  Corn
Step 5: Avocado
Step 6: Salsa
Step 7: Cheddar Cheese
Step 8: Broken Tortilla Chip Croutons

Lunch: a Healthier Taco Salad/ 8 Layer Salad!
Step 1: 1 cup Vegetarian Refried Black Beans
Step 2: 1/2 Tomato, chopped
Step 3: Cucumbers, diced
Step 4: Corn, sliced raw from 1 Cob of Corn
Step 5: 1/2 Avocado, diced
Step 6: 2 tbsp jarred Medium Salsa (mixed in a separate bowl with 1 tbsp water & drizzled on top)
Step 7: 2 tbsp shredded Cheddar Cheese
Step 8: 2 tbsp broken Organic Corn Tortilla Chip croutons
Water with Lemon
Regular Coffee, black

Snack:  1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk

Dinner: Coconut Curry Shrimp & Garlic Spinach & Tomatoes
14 (26/30 sized) Coconut Curry Shrimp over 1 cup of Garlic Spinach & Tomatoes in Coconut Curry Sauce
White Wine

RECIPES: 


I altered 2 things from the above recipe:
I used Light Coconut Milk because that is what we had and I used the juice from 1/2 Lime, since we love the Lime flavor so I just went for it.




Garlic Spinach & Tomatoes Recipe:
In a hot pan add 1 tbsp EVOO, 1/2 cup of chopped Red Onion, & 1 pint of Cherry Tomatoes and cover.  Let cook for 10 minutes, stirring a couple times in the midst of that.  Once Tomatoes burst add salt/ pepper, red pepper flake, and 4 cloves of Garlic, sliced.  Sautee for a couple minutes on lower heat so the Garlic doesn't burn.  Add 10 oz Baby Spinach and cover again and turn off heat and allow the Spinach to wilt. Once wilted, stir ingredients together and serve!
