Pesto Veggie Saute

Pesto Veggie Saute!

Today's Tidbit:  I was craving pasta for dinner, so I started throwing things together in a pan and ended up with so many yummy things in there that I didn't actually need to use any pasta.  The result was a totally delicious Veggie packed meal!  (pictured above).  The ingredients were mostly things that I already had ready in my fridge:  never underrate the value of having healthy food prepped and ready to go - it makes fast & healthy meals so easy!  Also, I think it is worth noting that this is never a meal I would have planned ahead and shopped for, most of my cooking is the result of simply buying food at the store that looks good and then spending time at home looking in the fridge trying to figure out what I'm going to cook!  Here is the recipe:




Pesto Veggie Saute Recipe

1 Medium Sized Yukon Gold Potato
Fresh  Corn sliced off Cob
2 Handfuls Cherry Tomatoes, halved
Fresh sliced & cooked Mushrooms (these were already browned and tossed with Balsamic Vinegar, a splash of EVOO & 1/4 tbsp Butter the day before)
2 Tbsp homemade Pesto (made with just Garlic, Basil & EVOO)
2 Handfuls fresh Arugula

Clean Potato, pierce in several places and microwave until soft:  3-4 minutes, turning halfway through.

Meanwhile in a seasoned Cast Iron Pan add Tomatoes & Corn; saute until tomatoes are soft.  Add Mushrooms and Pesto, mix everything together.  Add Arugula and once wilted, turn off heat.

Place Microwaved Potato on a large plate and slice it into 8 or so bite sized pieces.  Pour contents of Cast Iron Pan on top.  Serve and enjoy!




*This dish could have easily been made Vegan, if the Mushrooms were cooked with only EVOO & Balsamic Vinegar and no Butter.  I used it because I find this little amount actually makes the mushrooms more velvety and rich flavored.

I wanted to show that it is possible to lose weight and be healthy without being on a diet and without starving or depriving yourself of anything.  I make healthy choices whenever I can, but I am a normal person living a real life and I want to enjoy it, so I indulge in special treats regularly too.   
 
It has been a great journey for me, further motivating me to seek out new foods, new recipes and new ways to prepare and eat more healthily and get more Vitamins and Nutrients (and Energy!)  into my day.   I look forward to continuing this journey by highlighting special recipes, new foods and/ or preparations that I discover or create, alongside any helpful Health information or news that I come across through the above "Today's Tidbit".  Thanks for joining me on my journey to better health and better living!

Garden Dip

 
Super Easy Garden Dip!


Today's Tidbit:  I am a dipper, I love dips!  This is a super hearty one with Beans, Veggies & a little Cheese!  And it is a great summer snack when served with hydrating Veggies like Carrots, Cucumbers and Radishes...

 

Garden Dip Recipe:

Into food processor put:


1 large Garlic Clove
1 cup White Beans (rinsed/ drained)
1 can Artichoke hearts (rinsed/ drained)
1/2 cup Parmesan Cheese
1/4 cup Sun Dried Tomatoes, packed in oil, drained (or homemade dried tomatoes if you have the time & energy!)
1 large handful of Fresh Baby Spinach

Process and drizzle in 1-2 tbsp EVOO to taste, serve!

Cauliflower Rice & Guacamole Romaine Sandwiches

Today's Tidbit:  I have two new fav things:


1.  Cauliflower "Rice":  an easy way to eat more super healthy Cruciferous Veggies while eliminating extra rice, pasta or cousous from your day.  My Veggie & Cauliflower "Rice" dish pictured above.

Cauliflower Rice can be made by simply taking a raw head of Cauliflower, cutting it into 1 inch pieces (removing any rough stems), and then throwing it all into a food processor and pulsing until a rice consistency is reached.  



Guacamole Romaine Sandwiches


2.  Guacamole Romaine Sandwiches:  the absolutely guilt free way to enjoy guacamole - on long crispy leaves of romaine lettuce - instead of using chips, with some beans thrown in to provide a little stomach filling protein - YUM!   I ate mine up so fast, there was no time for pictures!  But the one above shows the general principle of the thing:  make some Healthy Guacamole and spoon it into long crisp romaine leaves and top with some fresh diced tomatoes & beans!


I discovered both of these wonderful things while flipping through The Fresh Energy Cookbook by Natalia Rose & Doris Choi.  This is a great resource and cookbook with lots of healthy eating ideas.  You can check out some of their recipes here.
