Roasted Red Pepper & Mushroom Thin Crust Pizza

Daily Tidbit:  When you see just how much Pizza & Snacks & Desserts I consumed tonight you will see why I had to find an article about ways to avoid overeating!

Plain Oatmeal with Walnuts & Cinnamon

Breakfast: Plain Oatmeal with Walnuts & Cinnamon  
1/2 cup uncooked Oatmeal, heated in microwave with:
1 cup Fat Free Milk, topped with:
2 tbsp Plain chopped Walnuts &
1/2 tsp Plain Ground Cinnamon
5 oz OJ
Regular Coffee, with a splash of Fat Free Milk & 1/2 tsp Pure Ground Cinnamon


Thanksgiving Leftovers for Lunch!

Lunch: Thanksgiving Leftovers! 
Roasted Turkey, White Meat 
Roasted Carrots 
Roasted Brussels Sprouts (recipe below) 
Mashed Sweet Potatoes (recipe below) 
Steamed Rutabagas with Butter, Salt & Pepper
Cranberry Sauce (recipe below)  
Traditional Stuffing
Decaf Coffee, splash of Fat Free Milk & Cinnamon

Snack: 1/4 cup lightly salted Peanuts, Fat Free Milk
Decaf Coffee, splash of Fat Free Milk & a couple shakes of Cinnamon

Dinner: Night out with friends & Way too much Pizza!
Roasted Red Pepper & Mushroom Thin Crust Pizza - likely 6 thin slices
Sausage & Onion Thin Crust Pizza - at least 2, maybe 3, thin slices
White Wine

When you eat this many slices of Pizza it is a little too easy to lose count.  The crust is really thin, so it is not super filling and easy to just keep eating and eating...


Dessert & Late Night Snacking:
1 Trader Joe's Bite Sized Chocolate Wafer Cookie

1 Trader Joe's Bite Sized Chocolate & Peanut Butter Wafer Cookie
1 serving White Corn Tortilla Chips & Salsa
1 Girl Scout Samoa Cookie
1 Girl Scout Tagalong Cookie  

I am not proud of my eating tonight,  the sheer amount seems nearly unbelievable, but it is real and it happened.  I was busy having fun chatting & munching away all night long.  Tomorrow is a new day :)



Brussels Sprout Recipe:

Raw Cranberry Sauce Recipe:
Into food processor put the following ingredients:


12oz bag of fresh Cranberries (cleaned and picked over first)
1 Sweet Apple, with skins, cut into large pieces
2 tsp Orange zest
1 Orange, skin removed, cut into large pieces
1/2 cup Orange Juice
1/4 cup Sugar 

Process to desired consistency/ chunkiness!  Let sit overnight to allow flavors to meld and sweeten.

Mashed Sweet Potato Recipe:
Take 1-2 Large Sweet Potatoes, clean and dry them.  Poke them all over with a sharp knife and then put on plate in microwave for 4 minutes, turn and do another 2-4 minutes until soft.  Remove skins and throw into a large mixing bowl.  Add 1 tbsp Butter and mash Potatoes (I find using a Masher is the easiest!).  Add Salt to taste and 1/2 -1 cup of Milk per desired consistency.  You can throw in chopped Pecans at this point or simply drizzle them on top when serving.
