Seafood Sampler with Asparagus & Avocado

Daily Tidbit:  Eat Asparagus to Prevent a Hangover?!  That is not why I enjoyed some with my lunch today (pictured above), but isn't the power of food amazing?  Check it out:

Plain Oatmeal with Cinnamon & Walnuts

Breakfast: Plain Oatmeal with Walnuts & Cinnamon
1/2 cup uncooked Oatmeal, heated in microwave with 1 cup Fat Free Milk
topped with 2 tbsp Plain chopped Walnuts &
1/2 tsp Plain Ground Cinnamon
5 oz OJ
Regular Coffee, with a splash of Fat Free Milk & 1/2 tsp Plain Ground Cinnamon

Seafood Sampler with Asparagus & Avocado

Lunch:  Seafood Sampler with Asparagus & Avocado
2 Jumbo Shrimp, 1 Sea Scallop & partial Lobster Tail, all cooked in a Garlic, White Wine and very likely Butter sauce - YUM!
2 spears of Asparagus
1/2 Avocado
Decaf Coffee, with a splash of Fat Free Milk & 1/2 tsp Pure Ground Cinnamon


Thanks to my awesome husband who brought these leftovers home for me last night after his business dinner!

Raw Cranberry Sauce

Snack:  1 cup Fresh Raw Cranberry Sauce (recipe below)

Portobello Napoleon with Chili Pepper Aioli & Brussels Sprouts: top view

Dinner: Portobello Mushroom Napoleon
2 Portobello Mushroom Caps, cleaned, marinated in Balsamic Vinaigrette for 10 minutes and cooked on stove in cast iron pan, layered with
Baby Spinach
1 slice Provolone Cheese
Roasted Red Peppers
2 tbsp Chili Pepper Aioli (made by mixing Olive Oil Mayo, Red Chili Pepper Sauce & Balsamic Vinaigrette)
served with Brussels Sprouts, simply boiled in water, sauteed in EVOO and topped with a little Butter & salt
Red Wine

Dessert: 1 Local Cameo Apple, Water

RECIPES: 
 
Raw Cranberry Sauce Recipe:

Into food processor put the following ingredients:
12oz bag of fresh Cranberries (cleaned and picked over first)
1 Sweet Apple, with skins, cut into large pieces
2 tsp Orange zest
1 Orange, skin removed, cut into large pieces
1/2 cup Orange Juice

Process to desired consistency/ chunkiness!  Let sit overnight to allow flavors to meld and sweeten.

This is the first time I have ever made Raw Cranberry Sauce and the first time I've tried making Cranberry Sauce without adding any Sugar.  It was good and fresh and tart with a hint of sweetness.  If you like your cranberry sauce on the sweet side, I'd say add 1/2 cup of Sugar or so, to taste.
