Sunflower Seed Butter

Daily Tidbit:  I had Sunflower Seed Butter for the first time this morning with Mango Butter on Bread (this was basically a fancy PBJ).  It turned out to be a good substitute for Peanut Butter, with the same amount of Protein and more Fiber, for an incredibly similar look, texture and taste.  I'm thinking it would be fun to try a Sunflower Seed Butter Satay some night soon!

Breakfast: Fancy PBJ:  Sunflower Seed Butter & Mango Butter Sandwich
2 slices Arnold's  Whole Grain Oat Nut bread 
1 tbsp Sunflower Seed Butter
1 tsp Mango Butter
Regular Coffee, black


*Mango Butter is a spread, similar to Jelly, and no, it does not contain any actual butter!  To be considered a "Butter" a spread simply needs to contain more fruit than sugar.   As a result it is lower in Calories and in Sugar.  And it has a richer, creamier texture, and can be used with Peanut Butter, Pancakes, on Toast or even with Ice Cream or Frozen Yogurt.  I'm also thinking it would be good mixed with a little Curry and some Mayo or Plain Yogurt in a Chicken Salad, or to make a fast and easy Mango Chutney!

Falafel sandwich: 3 large Falafels rolled with Lettuce, Tomato and Tzatziki Sauce on a Pita

Dinner:  Steak Nachos
Choice Angus Beef Top Round Thin, Sandwich Steak cooked with Canola Oil Spray, salt/ pepper in Cast Iron Skillet and tossed in sauce (recipe below) & served on top of:
Low Sodium White Corn Tortilla Chips toasted with 
1/4 cup Cheddar & Mozz cheese
3 tbsp jarred Medium Salsa
1/2 Avocado
Red Wine

RECIPES: 


Choice Angus Beef Top Round Thin, Sandwich Steak Recipe:
1 pound/ 5 Thin Steaks seasoned with salt/ pepper and cooked with Canola Oil Spray in Cast Iron Pan, a few minutes for each side.
Once all steaks are cooked, remove to cutting board to rest.  Meanwhile add a 2-3 tbsp of Low Sodium Chicken Broth to Cast Iron Pan, along with 1 tbsp unsalted Butter & 4 Garlic cloves, sliced.  Cook sauce until Butter has melted and sauce reduces in half.  Slice Steaks against the grain into thin slices and place back into pan to toss with reduced sauce for a minute or two, then serve.

There are lots of ways to enjoy this steak (sandwiches, stir fries etc) but they were quite delicious on top of Nachos too.  Next time I would cut the steak into smaller bite sized pieces to make for a less messy meal!
