Angus Steak Veggie Stir Fry


Daily Tidbit:  I read an article in Real Simple about transforming leftovers last week and got inspired to be slightly more organized with my cooking.  So last night I made 2 meals worth of Angus Steak and made Steak Nachos (YUM!) and then used the leftover Steak tonight to make a quick and delicious Steak Veggie Stir Fry (YUM again)!  Here are some of their ideas of how enjoy leftovers in a new exciting way:

Oatmeal with Walnuts


Breakfast: Oatmeal with Walnuts
1/2 cup Plain Oatmeal, microwaved with 3/4 cup Fat Free Milk
2-3 Shakes Plain Cinnamon
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, Black

Spinach Salad with Chicken, Pecans & Apples



Lunch:  Spinach Salad with Chicken, Pecans & Apples
1 cup Baby Spinach greens
1 cup Rotisserie Chicken (white meat)
1/2 cup Carrots, pureed
1/2 Gala Apple, diced
1 tbsp Pecans
1 tbsp Balsamic Vinaigrette
Regular Coffee, black
Water with Lemon

Snack: 1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk

Angus Steak Veggie Stir Fry



Dinner:  Angus Steak Veggie Stir Fry
1 large bowl (2 cups worth) of Angus Steak Stir Fry with Veggies (recipe below)
White Wine

Dessert: 1 Gala Apple, Water

RECIPES: 


Tonight I used leftover cooked Angus Steak from last night.  If you are starting with fresh Steak, here is the Recipe I used last night:

Angus Steak Veggie Stir Fry Recipe:
In Cast Iron Pan, Spray Canola Oil to coat bottom and heat to medium high heat.  Add:
 
1 large Carrot, sliced
1/2 large Zucchini, diced
1 cup chopped Yellow, Red & Green Peppers
1/2 Red Onion, sliced
1 cup Broccoli
2 Scallions, cut into bite sized pieces 

While above items Saute, make Stir Fry Sauce (recipe below)
When Veggies reached desired done-ness, add Stir Fry Sauce & Leftover cooked Angus Steak.  Cook for two minutes, tossing to get everything heated through and then Plate.  Add 1 tbsp Toasted Pine Nuts per Plate.(Toasted Almonds would have been a better pairing perhaps, but the Pine Nuts were ready to go and I was hungry!)


Stir Fry Sauce Recipe:

Mix the following ingredients:

1/4 cup Low Sodium Chicken Broth
1/4 cup Low Sodium Soy Sauce
2 tsp Rice Wine Vinegar
2 tsp Sesame Oil
2 tsp Red Pepper Flake (if you don't love tons of heat, go for 1 tsp)
