1 Single Delicious Glazed Doughnut! |
Daily Tidbit: I am not going to tell you to go have a Doughnut today.....but I did! I love Doughnuts, fully understanding that they are not good for one's health and devoid of virtually all nutritive value, still they are a favorite indulgence of mine that I could not resist today. That being said, I am a girl who has done her homework and knows quite well that all Doughnuts are not created equal in terms of Fat & Calories, and my fav, the Glazed Doughnut, happens to be among the lowest Calories of all doughnuts (180). I also know that 1 Doughnut can satisfy just as good as 2, 3 or 5, if you eat it really slowly and truly savor every mouthwatering bite! Beware if your fav happens to be a Chocolate Frosted Cake Doughnut - that will set you back 360 Calories, twice the amount as my Glazed variety. Well, we all have our weaknesses. Whole Wheat Banana Bread & Eggs Over Easy |
Breakfast:Banana Bread & Eggs
1 slice of Homemade Whole Wheat Banana Bread (recipe below) with 1 tsp Brummel n Brown spread
2 Eggs, Over Easy, cooked with Canola Oil Spray in Cast Iron Pan
Regular Coffee, black

1 White Flour Tortilla
Rotisserie Chicken
Cheddar Cheese
1/2 Avocado
1 tbsp jarred Medium Salsa
Water with Lime
I found these White Flour Tortillas at the Dollar Store - 8 Tortillas for $1! And they only have 100 Calories and 160 mg Sodium and 0g Sugar. Oh, and they are yummy too!

Snack:
.825 oz Trader Joe's 72% Cacao Dark Chocolate
Regular Coffee, black
Fat Free Milk

RECIPES:
Whole Wheat Banana Bread Recipe:
Preheat oven to 350 and grease loaf pan with Canola Oil Spray.
Mix:
4 Ripened Bananas
2 Eggs
2 cups Whole Wheat Flour
2, 4 oz containers of unsweetened Apple Sauce
1 tsp Baby Soda
1 tsp Salt
Cook for 1 hour and let cool for 10 minutes before serving.
If you are not used to eating unsweetened Whole Wheat Banana bread my suggestion would be to first make it with half white flour and half whole wheat flour and to use 1/4 cup of regular sugar instead of the apple sauce. Then the next time you make it you could use all Whole Wheat flour and the sugar. Then the next time you could make it as listed above. I made these changes slowly over the course of time which made it easy to adjust to the flavor difference. I used to make this recipe with all white flour and the sugar, however, these changes make it much healthier! And, my kids never noticed any difference!
Coconut Curry Chicken Recipe:
I stole the recipe I used a week or so ago from Food Network that is supposed to be for Shrimp, which was so easy and so good that I tried it tonight with some Veggies & Rotisserie Chicken.

My Version: Easy & Fast Coconut Curry Chicken Recipe:
1 can "Light" Coconut milk
Juice from 1/2 Lime
1 tbsp Curry
2 tsp Ginger Paste
*I didn't use salt, but you can add it before serving if you are missing it!
Whisk together above ingredients in hot pan and reduce for 10 minutes, then add chopped Rotisserie Chicken & thawed frozen Veggies. Cover, heat & serve!
1 can "Light" Coconut milk
Juice from 1/2 Lime
1 tbsp Curry
2 tsp Ginger Paste
*I didn't use salt, but you can add it before serving if you are missing it!
