Potatoes are loaded with Resistant Starch!


Daily Tidbit:  I LOVE Cape Cod Kettle Cooked Sweet Mesquite Potato Chips.  They are a serious weakness of mine and I enjoyed munching on some for a snack today.  But I don't beat myself up when I enjoy them on the rare occasion because they are lower fat that regular Potato Chips and they always seem to fill me up, thanks to all the resistant starch in Potatoes!  Resistant Starch is a type of Fiber which I consider fairly magical .... a food that is super yummy, high in fiber and fills me up.  To see the long list of other yummy foods that provide Resistant Starch:

Frosted Shredded Wheat & Walnuts

Breakfast: Cereal & Fruit
1 cup of Frosted Mini Wheats Cereal
1 cup Fat Free Milk
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, Black

Coconut Curry Chicken & Veggies!


Lunch: Coconut Curry Chicken & Veggie Blast
2 cups Coconut Curry Veggie Blast with Beans (recipe below) with the addition of:
1/2 cup of pre-cooked Chicken
1/2 cup of Mushrooms
1 large Handful of Arugula
Cherry Coke Zero
Regular Coffee, black

Another attempt to recreate this dish to finish the leftovers - totally delish!  Any dish takes on a new personality when you add Arugula, one of my personal fav flavor boosters.

Snack: 1/4 cup of mixed dry roasted, lightly salted Nuts (Pistachios, Pecans, Peanuts, Hazelnuts & Cashews) & Diet Coke

Snack: 2 servings of Cape Cod All Natural Kettle Cooked Mesquite Potato Chips, Water with a splash of Lemonade on top

Nachos!
Pinto Beans + Avocado + Salsa + 1 tbsp Water

Dinner: Nachos (yes, again - this is why my husband calls me Juanita!)
Organic Yellow Corn Lower Sodium Tortilla Chips, toasted
1/4 Cup Part Skim Mozzarella Cheese & 1/8 cup Cheddar Cheese
1 cup of Pinto Beans with 1/2 Avocado & 3 tbsp jarred Medium Salsa + 1 tbsp of Water
White Wine
