1/2 cup Chick Peas
1/4 cup Broccoli Salad
Water with Lemon

This lunch was my attempt to finish some of the leftovers in the fridge and it turned out pretty yummy (and totally filling!)

Snack: 4 cups Plain Popcorn, popped in brown paper bag in microwave for 2.5 minutes (Cooking it 3 minute led to some burnt pieces)

Snack: 4 Organic Yellow Corn Lower Sodium Tortilla Chips, Fat Free Milk

Spicy Corn & Zucchini Salsa with Avocado |
Mozzarella Nachos |
Dinner: Spicy Corn & Zucchini Salsa with Chips
1 cup Spicy Corn & Zucchini Salsa (recipe below)
1/2 Avocado
Organic Yellow Corn Lower Sodium Tortilla Chips, toasted with Part Skim Mozzarella Cheese
White Wine
I made this salsa to try something different and I thought it was amazing! For my personal taste it was very spicy, but not too spicy; I couldn't get enough of it - I had a whole second helping of dinner (another cup of salsa, more avocado & chips, only without the cheese the 2nd time around).

Spicy Corn & Zucchini Salsa Recipe:
Into the food processor goes:
1 JalapeƱo (the whole thing, seeds and all!)
1 Large Clove of Garlic
1/2 Large Tomato
1/4 Red Onion
1/2 tsp Salt
Juice from 1/2 Lemon
Process until desired consistency and put in fridge to marinate a few hours. Before serving add:
1 cup Raw Zucchini, diced finely
Fresh Raw Corn, cut from 1 Cob
Add diced Zucchini and Corn to Salsa mixture and serve. In this case I also added 1/2 Avocado, diced, which was delicious of course, but also help mitigate the spiciness, and the creaminess was a perfect complement to the spicy flavor of the Salsa!
