Wild Alaskan Salmon over Arugula & Grape Salad!


Daily Tidbit:  I love this article:  "The New Food Rules".  Steak & Butter are okay (in moderation of course) and we can stop buying all those Fat Free foods; at best they are bland, but usually they are strange tasting or flat out inedible!  To read more "new rules":

Breakfast: Cheerios & Nuts
1 cup Cheerios
1 cup Fat Free Milk
2 tbsp mixed lightly salted Nuts
5 oz. OJ
Regular Coffee, Black

Asian Veggie Blast!


Lunch: Asian Veggie Blast with Beans & Nuts
2.5 cups Asian Veggie Blast: Carrots, Baby Corn, Red Peppers, Broccoli, Peas, Mushrooms, Water Chestnuts, Cauliflower, Onions, & White Cannellini Beans, sauteed in EVOO and tossed with Asian Sauce (recipe below) and topped with 2 tbsp plain roasted Almond slivers
Regular Coffee, black


The 'mushy' ingredient that you can see in the pic, is the Cauliflower...it was already cooked before I added it, so it fell to pieces once reheated, but it did not affect the deliciousness of the dish luckily!

Snack: 2 cups Plain Popcorn with Parmesan Cheese & Water with Lime

I figured out how to get the Parmesan to 'stick' to the popcorn...
Pop plain popcorn kernels in plain brown paper bag, folded over three times to create a seal and then microwaved for 3 minutes.  Put popped corn into bowl, spray with Canola Oil Spray lightly and then shake Parmesan cheese on top and toss - voila!

Snack:  10 Plain Almonds

Dinner: Wild Alaskan Salmon over Arugula & Grape Salad
1 Fillet Wild Caught Alaskan Salmon, served over:

Arugula
1 cup grapes, halved
1/2 Avocado, diced
1/2 Tomato, diced 
1/4 cup Fat Free Feta Cheese
1 tbsp Trader Joe's Light Champagne Vinaigrette
White Wine

Dessert: Local Gala Apple, Water

RECIPES: 


Asian Sauce Recipe:

3 tbsp Low Sodium Soy Sauce
1 tbsp Duck Sauce (try to find one without HFCS/ MSG!)
1 tsp Ginger Paste
1 tsp crushed Garlic

This is not fancy, but I threw it together quickly for my lunch and it tasted pretty good!  In retrospect I would have enjoyed some Red Pepper Flake in there, but I didn't think of it at the time and maybe even a squirt of Lime juice too!
