Chocolate Banana Peanut Butter Dip

Chocolate Banana Peanut Butter Dip with Apples

Today's Tidbit:    Is there anything better than being able to quickly pull together a yummy and healthy dessert with things you already have in your kitchen?  I don't think so!  I'm not much of a baker, so I love having something easy to enjoy when I'm pinched for time and craving a sweet (and healthy) treat.  

Meet my new fav Potassium, Protein and Antioxidant filled Dessert:  Chocolate Banana Peanut Butter Dip!  It resembles one of my favorite Halloween goodies:  Peanut Butter Cups, but is a whole lot healthier!  And, it has only 3 ingredients and comes together in about a minute.   



Chocolate Banana Peanut Butter Dip Recipe:

Mash an overripe Banana in a bowl and mix in 1-2 tbsp of Natural Peanut Butter and 1-2 tbsp Organic Chocolate Syrup (depending on how Peanut Buttery or Chocolatey you like it).  Slice up some Apples or Pears for dipping, or even some Strawberries....delish!



I'd love to be able to take full credit for this concoction, but the truth is that I got inspired while flipping through Jessica Seinfeld's cookbook:  Deceptively Delicious.  Her book is totally worth a scan; there are loads of interesting and healthy ideas for feeding kids and adults alike!

Spinach Mango Salad

Today's Tidbit:    Mangoes!  I found Mangoes for $1 each this week so I grabbed a bunch; we love them!  They looked ripe enough today so I cut one up and threw some into my salad at lunch time - awesome addition.  Mangoes are loaded with Antioxidants, Vitamins, Fiber and may even lower blood pressure.  Oh, did I mention...they are delicious too!   Here is some more info as well as some other ideas of how to use them: The Healthy Mango!

Spinach Mango Salad!

Spinach Mango Salad Recipe:
(I threw a whole bunch of yummy stuff from the fridge into this....)

In a bowl toss Organic Baby Spinach, diced Mango, Sesame Seeds, Pecans, dried Cranberries, diced Apples, sliced Cucumbers, and 2 chopped Hard Boiled Eggs, and a tbsp of Balsamic Vinaigrette.  Enjoy!

Goat Cheese & Tomato "Pasta"


Goat Cheese & Tomato "Pasta"

Today's Tidbit:   So I'm calling today's post Goat Cheese & Tomato "Pasta" because well, there really isn't any pasta in it.  Instead I used my favorite pasta substitute:  Spaghetti Squash!  This is a super simple and fast recipe and is just as satisfying and filling as a regular pasta dish (only without the starch coma afterwards!) and a lot less calories!

1 cup of cooked Spaghetti = 221 calories
1 cup of Spaghetti Squash = 31 calories!


To me this sub is a no brainer, and again is just as yummy and filling!   Here is the recipe:



Goat Cheese & Tomato "Pasta"


Goat Cheese & Tomato "Pasta" Recipe:

1 Medium Spaghetti Squash
2 tbsp EVOO (Extra Virgin Olive Oil), separated
1/2 Red Onion, thinly sliced
2 Large Cloves of Garlic, chopped
Red Pepper Flake, to taste, depending on how spicy you like it
1 pint Cherry or Grape Tomatoes
1 can White Cannellini Beans, drained & rinsed
Arugula (as many handfuls as you want!)
Goat Cheese


Clean off Spaghetti Squash and poke all over with a sharp knife.  Microwave for 6 minutes, turn and do another 6 minutes.  Let it sit for a couple minutes to cool down.  Then feel with your hands for softness - if it isn't soft, do a few more minutes.  When you are able to handle it (it gets really hot, so I typically will do this as much as an hour in advance!) cut off the ends, and then cut in half lengthwise.  Scoop out the seeds and then holding it up in one hand, over a large bowl or plate, take a fork and scrape down the sides of the squash, allowing the spaghetti-like strands to fall out.  Set aside.

In a large Dutch Oven (or heavy saucepan) heat 1 tbsp EVOO and then add the Red Onion.  Give it a couple minutes to soften and then add the Garlic and the Red Pepper Flake.  When fragrant (a minute or two) add the Tomatoes, lower heat and cover and allow to simmer for 10 minutes until the Tomatoes begin to pop and let out their juices.  It should be smelling amazing already!  Add the Beans, the Squash and another tbsp of EVOO and then cover to heat through, a couple more minutes.  Turn off heat, throw the Arugula on top and then cover again for a couple more minutes, allowing the Arugula to wilt a little.  Serve and top with Goat Cheese.  YUM.


This is a great Fall/ Winter meal because it feels so hearty and is so delicious and satisfying, yet again, providing a lot less calories and simple carbs then pasta.

Almond Chocolate Chip Cookies

Almond Chocolate Chip Cookies!

Today's Tidbit:   I don't feel bad at all giving these to my kids...or myself for that matter; they are full of healthy stuff and furthermore, delicious!  Almond Chocolate Chip Cookies - hello YUM!  I came across this recipe in a magazine and loved the ingredient list (short and full of good stuff):  Almonds, Banana, Brown Sugar, Oatmeal....no butter or flour needed!  If you have seen a healthier and more delicious Chocolate Chip cookie, please let me know!  I cut the magazine recipe in half, plenty for my brood, and everyone loved them.  This is the recipe I used:




Almond Chocolate Chip Cookies!


Almond Chocolate Chip Cookies Recipe:


1 cup unsalted slivered Almonds (finely ground in food processor) 
1/2 cup Canola Oil
1/3 heaping cup Brown Sugar
1 large Egg
1/2 tsp Vanilla extract
1/2 large ripe Banana, mashed
1 cup Oatmeal
1/2 cup Bittersweet Chocolate Chips


Preheat oven to 350.

Using an electric mixer, cream together Canola Oil, Brown Sugar, Egg and Vanilla in a bowl.  Add Banana, Oats, and ground Almonds to bowl.  Beat again until well blended.  Toss in Chocolate Chips and mix in to combine.  Drop rounded tablespoons onto a non stick baking sheet.  Bake for 15 minutes (give or take 1-2 minutes either way).  

I made about 20 all together with this recipe.  Super moist, super healthy cookie and super delicious!!!  Enjoy :)

Today's Tidbit:   A salad can become a whole meal when you throw in some whole grains.  It can also be a great cool option for a lunch or dinner during the warm months of Summer.  Such was the case with the above pictured Barley Summer Salad.


Barley can take a while to cook, but not if you find a par-cooked version, such as sold at Trader Joe's, which only take 10-15 minutes to prepare and then it's ready to throw into any meal!  If you don't like Barley, or can't find it, you can always sub in Farro, Whole Wheat Couscous, Quinoa, Bulgur or any other whole grain you like!  My recipe is below.




Barley Summer Salad

Barley Summer Salad Recipe

2 cups cooked Barley
Arugula
Cilantro, chopped
Red Onion, chopped
Green Onions/ Scallions, sliced
Jersey Tomatoes, chopped
Cucumbers, sliced
Walnuts
White Cannellini Beans (drained/ rinsed)
Grapes, halved
Gala Apple, diced
Balsamic Vinaigrette
Juice from 1/2 Lime

Mix everything together and chill or serve!  


2 types of Greens (Cilantro & Arugula) + 2 types of Onions (Red & Green) + 2 Veggies (Tomatoes & Cucumbers) + 2 Fruit (Apples and Grapes) + 2 Proteins (Nuts & Beans) + 2 Dressings (Vinaigrette & Lime Juice) + 1 Whole Grain (Barley) = totally filling, totally delicious and totally satisfying meal that transports easily for picnics, concerts, the beach or a BBQ because there is no meat, mayo or cheese to worry about in the heat!  

(Yes, though Tomato is technically a Fruit, we consider it a Veggie in this house!)

Pesto Veggie Saute

Pesto Veggie Saute!

Today's Tidbit:  I was craving pasta for dinner, so I started throwing things together in a pan and ended up with so many yummy things in there that I didn't actually need to use any pasta.  The result was a totally delicious Veggie packed meal!  (pictured above).  The ingredients were mostly things that I already had ready in my fridge:  never underrate the value of having healthy food prepped and ready to go - it makes fast & healthy meals so easy!  Also, I think it is worth noting that this is never a meal I would have planned ahead and shopped for, most of my cooking is the result of simply buying food at the store that looks good and then spending time at home looking in the fridge trying to figure out what I'm going to cook!  Here is the recipe:




Pesto Veggie Saute Recipe

1 Medium Sized Yukon Gold Potato
Fresh  Corn sliced off Cob
2 Handfuls Cherry Tomatoes, halved
Fresh sliced & cooked Mushrooms (these were already browned and tossed with Balsamic Vinegar, a splash of EVOO & 1/4 tbsp Butter the day before)
2 Tbsp homemade Pesto (made with just Garlic, Basil & EVOO)
2 Handfuls fresh Arugula

Clean Potato, pierce in several places and microwave until soft:  3-4 minutes, turning halfway through.

Meanwhile in a seasoned Cast Iron Pan add Tomatoes & Corn; saute until tomatoes are soft.  Add Mushrooms and Pesto, mix everything together.  Add Arugula and once wilted, turn off heat.

Place Microwaved Potato on a large plate and slice it into 8 or so bite sized pieces.  Pour contents of Cast Iron Pan on top.  Serve and enjoy!




*This dish could have easily been made Vegan, if the Mushrooms were cooked with only EVOO & Balsamic Vinegar and no Butter.  I used it because I find this little amount actually makes the mushrooms more velvety and rich flavored.

Garden Dip

 
Super Easy Garden Dip!


Today's Tidbit:  I am a dipper, I love dips!  This is a super hearty one with Beans, Veggies & a little Cheese!  And it is a great summer snack when served with hydrating Veggies like Carrots, Cucumbers and Radishes...

 

Garden Dip Recipe:

Into food processor put:


1 large Garlic Clove
1 cup White Beans (rinsed/ drained)
1 can Artichoke hearts (rinsed/ drained)
1/2 cup Parmesan Cheese
1/4 cup Sun Dried Tomatoes, packed in oil, drained (or homemade dried tomatoes if you have the time & energy!)
1 large handful of Fresh Baby Spinach

Process and drizzle in 1-2 tbsp EVOO to taste, serve!

Cauliflower Rice & Guacamole Romaine Sandwiches

Today's Tidbit:  I have two new fav things:


1.  Cauliflower "Rice":  an easy way to eat more super healthy Cruciferous Veggies while eliminating extra rice, pasta or cousous from your day.  My Veggie & Cauliflower "Rice" dish pictured above.

Cauliflower Rice can be made by simply taking a raw head of Cauliflower, cutting it into 1 inch pieces (removing any rough stems), and then throwing it all into a food processor and pulsing until a rice consistency is reached.  



Guacamole Romaine Sandwiches


2.  Guacamole Romaine Sandwiches:  the absolutely guilt free way to enjoy guacamole - on long crispy leaves of romaine lettuce - instead of using chips, with some beans thrown in to provide a little stomach filling protein - YUM!   I ate mine up so fast, there was no time for pictures!  But the one above shows the general principle of the thing:  make some Healthy Guacamole and spoon it into long crisp romaine leaves and top with some fresh diced tomatoes & beans!


I discovered both of these wonderful things while flipping through The Fresh Energy Cookbook by Natalia Rose & Doris Choi.  This is a great resource and cookbook with lots of healthy eating ideas.  You can check out some of their recipes here.

Grilled Vegetable Platter

Today's Tidbit:  The Grilled Vegetable Platter.  Many restaurants list this on their menus; it can be gorgeous, delicious & costly, but don't be fooled, it isn't hard to make!  Simply buy some of your favorite Vegetables, marinate them in your favorite Balsamic Vinaigrette and then grill them!  Simply check them every couple minutes and flip them over when they start to show the tell tale brown grill marks and have become tender.  

I used Eggplant, Zucchini, Red Bell Peppers, Red Onions and Spinach and served it all on a bed of Balsamic Vinegar soaked White Cannellini Beans to inject some extra Protein into this stand alone dish.  But tasty Grilled Veggies can also be served as a side dish or salad to complement almost any meal.  And it isn't just meant for the summer months only, a simple cast iron Grill Pan can be used in the comfort of your own kitchen (that is how I made mine!)  Don't underestimate the Cast Iron Grill: it is able to impart the dark deep grill marks and infuse a smoky flavor that we love from our outdoor Grills.

Today's Tidbit:  After reading in a ton of places that eating Yogurt was a great way to stay healthy through the cold & flu season, I started making Smoothies for my family every morning to go with our breakfast.  I am happy to report that since then (the beginning of December) we have had no missed days of school or work.  Sure we have had sniffles here and there, but no fevers, no crazy green boogies and no doctor visits!  I consider this a huge success and am a total convert.  Daily Yogurt Smoothies are now a part of our happier and healthier life!

Below are many of the Smoothies we have tried.  They can be made thicker or thinner (more or less Bananas or Juice), or cooler (more or less Frozen Fruit or ice cubes).  My only constants are the Yogurt of course, 1-2 other Fruits and I always try to get a Vegetable in there too, typically Carrots or Spinach, but also sometimes Pumpkin, Zucchini or Yellow Squash!  Check them out:

Into Blender put:

1 handful of Baby Carrots
1 Large peeled Banana
1 cup All Natural Fat Free Vanilla Yogurt
1 cup Orange Juice
1 cup Frozen Peach Slices

Blend until smooth (1-2 minutes in the case of my Blender!) Enjoy :)





The Story of What Amy Ate Today:
 
Last year I created the What Amy Ate Today blog to share my personal story of losing over 40 pounds by making simple healthy changes to the way I was eating.  I wanted to show the real life picture of what my daily food choices looked like by simply posting every single thing that I ate every single day; which I did for 9 straight months!

One Day Last June....
I wanted to show that it is possible to lose weight and be healthy without being on a diet and without starving or depriving yourself of anything.  I make healthy choices whenever I can, but I am a normal person living a real life and I want to enjoy it, so I indulge in special treats regularly too.   
 
It has been a great journey for me, further motivating me to seek out new foods, new recipes and new ways to prepare and eat more healthily and get more Vitamins and Nutrients (and Energy!)  into my day.   I look forward to continuing this journey by highlighting special recipes, new foods and/ or preparations that I discover or create, alongside any helpful Health information or news that I come across through the above "Today's Tidbit".  Thanks for joining me on my journey to better health and better living!
