Almond Chocolate Chip Cookies

Almond Chocolate Chip Cookies!

Today's Tidbit:   I don't feel bad at all giving these to my kids...or myself for that matter; they are full of healthy stuff and furthermore, delicious!  Almond Chocolate Chip Cookies - hello YUM!  I came across this recipe in a magazine and loved the ingredient list (short and full of good stuff):  Almonds, Banana, Brown Sugar, Oatmeal....no butter or flour needed!  If you have seen a healthier and more delicious Chocolate Chip cookie, please let me know!  I cut the magazine recipe in half, plenty for my brood, and everyone loved them.  This is the recipe I used:




Almond Chocolate Chip Cookies!


Almond Chocolate Chip Cookies Recipe:


1 cup unsalted slivered Almonds (finely ground in food processor) 
1/2 cup Canola Oil
1/3 heaping cup Brown Sugar
1 large Egg
1/2 tsp Vanilla extract
1/2 large ripe Banana, mashed
1 cup Oatmeal
1/2 cup Bittersweet Chocolate Chips


Preheat oven to 350.

Using an electric mixer, cream together Canola Oil, Brown Sugar, Egg and Vanilla in a bowl.  Add Banana, Oats, and ground Almonds to bowl.  Beat again until well blended.  Toss in Chocolate Chips and mix in to combine.  Drop rounded tablespoons onto a non stick baking sheet.  Bake for 15 minutes (give or take 1-2 minutes either way).  

I made about 20 all together with this recipe.  Super moist, super healthy cookie and super delicious!!!  Enjoy :)

I wanted to show that it is possible to lose weight and be healthy without being on a diet and without starving or depriving yourself of anything.  I make healthy choices whenever I can, but I am a normal person living a real life and I want to enjoy it, so I indulge in special treats regularly too.   
 
It has been a great journey for me, further motivating me to seek out new foods, new recipes and new ways to prepare and eat more healthily and get more Vitamins and Nutrients (and Energy!)  into my day.   I look forward to continuing this journey by highlighting special recipes, new foods and/ or preparations that I discover or create, alongside any helpful Health information or news that I come across through the above "Today's Tidbit".  Thanks for joining me on my journey to better health and better living!
