Frosted Mini-Wheats with Walnuts

Breakfast: Mini-Wheats
1 cup Frosted Shredded Mini-Wheats
1 cup Fat Free Milk
2 tbsp Plain chopped Walnuts
5 oz OJ
Regular Coffee, black

Snack: 4 cups Plain Popcorn (plain popcorn kernels popped in folded brown paper bag in microwave for 3 minutes), Water with Lemon

Cheeseburger for Dinner

Dinner: Dinner at a Friend's House
Angus Hamburger with Cheese, Ketchup, Onion & Tomato on White Roll
Piece of Corn Bread
Broccoli, Cauliflower & Carrots, plain
Whole Wheat Couscous Salad (recipe below) 
1/2 Ear of boiled Corn (Plain/ not pictured)
Mojito

After eating everything on the plate and the Corn, I had two more 1/2 cup servings of the Couscous Salad!

RECIPES: 


Curry Pea Dip Recipe:
I found this recipe in Real Simple Magazine a ton of years ago and we fell in love with it.  It is easy, healthy and fast to make!  I could not find the  link to the recipe, but this is how I made it today:

Into food processor put:
1-2 cups Frozen Sweet Peas (thawed on counter for 30 minutes or so)
3 Scallions
1 tsp Curry
1 tbsp EVOO
Salt, to taste


Couscous Salad Ingredients before adding the Couscous

Whole Wheat Couscous Salad Recipe:
Into bowl add & mix:

Zucchini, finely diced
Red Onion, sliced
Black Beans (canned, drained & rinsed)
Chick Peas (canned, drained & rinsed)
Cilantro, chopped
Juice from 1/2 Lime
Toasted Almonds
Gala Apple, finely diced
Raw Corn, cut from 1 Cob
Trader Joe's Balsamic Vinaigrette
Cooked Whole Wheat Couscous


I didn't measure anything, I just threw everything together, though I'd say it was probably 1/2-1 cup of most ingredients and 2-3 cups of Couscous, more or less.  The pic above is all the ingredients and dressing mixed before adding the Couscous, which actually would have been a very good salad in it's own right!
