Black Bean Cakes with Spicy Cilantro Aioli with Acorn Squash & Chips

Daily Tidbit:  So the above pic may look a little strange, but here is the thinking....I made Black Bean Cakes and a super yummy Spicy Cilantro Aioli sauce to go on top as if I was going to have a Black Bean Sandwich with Chips for Dinner.  However, I opted to skip the bread and subbed in some Acorn Squash for an extra serving or 2 of veggies and up the Fiber in the meal to fill me up, it was totally successful.

I came across this Black Bean recipe while reading through Catherine McCord's book Weelicious, which focuses on providing easy and healthful kid friendly recipes, but these Black Bean Cakes are good for the whole family!  Check it out here:

Cheerios with Blueberries



Breakfast: Cheerios & Blueberries
1 cup Cheerios
3/4 cup Fat Free Milk
1/2 cup Blueberries
Regular Coffee, with a splash of Fat Free Milk & 1/2 tsp Pure Ground Cinnamon

Snack: 1/4 cup lightly salted Peanuts

Roasted Turkey, White Meat with Cranberry Sauce (recipe below)

Steamed Rutabagas with Butter, Salt & Pepper

Decaf Coffee, splash of Fat Free Milk & Cinnamon

Snack:  4 cups Plain Popcorn (popped in microwave in folded brown paper bag)
Water with Lemon

Acorn Squash (simply microwaved until soft - no salt/ pepper/ butter needed!)
Organic Yellow Corn Lower Sodium Tortilla Chips with Medium jarred Salsa
White Wine

Raw Cranberry Sauce Recipe: 
Into food processor put the following ingredients:

   
12oz bag of fresh Cranberries (cleaned and picked over first)
1 Sweet Apple, with skins, cut into large pieces
2 tsp Orange zest
1 Orange, skin removed, cut into large pieces
1/2 cup Orange Juice
1/4 cup Sugar


Process to desired consistency/ chunkiness!  Let sit overnight to allow flavors to meld and sweeten.


Black Bean Cakes Recipe:
I came across the below recipe while browsing a cookbook aimed at easy healthy meals for kids:  Weelicious by Catherine McCord.
 


I followed the above recipe except that I substituted broken Corn Tortilla Chips for Bread Crumbs, because we didn't have any.  These came out great, we loved them and served them with the Spicy Cilantro Aioli.


Spicy Cilantro Aioli Recipe:
I was sad we didn't have any Avocado to go with these Black Bean Cakes, but I figured I'd whip up something else based on ingredients we already had in the fridge and this turned out super yummy!  

Large bunch of Cilantro + Equal Parts Olive Oil Mayo & Plain Yogurt + Chili Pepper Hot Sauce, to taste
