Spicy African Peanut Stew |
Daily Tidbit: I tried a new recipe today: Spicy African Peanut Stew (pictured above)! Totally delicious and super easy to make in the Slow Cooker. It is a really hearty stew, packing Chick Peas, Peanut Butter, Sweet Potatoes & Red Lentils in a spicy Coconut & Tomato based broth. I was happy to find a great recipe to try with my newly purchased Red Lentils, which are loaded with Fiber and Protein, and Dr. Oz rates them among the top 3 Anti-Aging foods!

Plain Oatmeal with Walnuts & Cinnamon |
Breakfast: Plain Oatmeal with Walnuts
1/2 cup uncooked Plain Oatmeal, heated in microwave with:
1 cup Fat Free Milk, then topped with:
2 tbsp Plain Walnuts & 1/2 tsp Plain Ground Cinnamon
5 oz OJ
Regular Coffee, with a splash of Fat Free Milk and 1/4 tsp Plain Ground Cinnamon
Lunch: Slow Cooker Spicy African Peanut Stew

topped with fresh cut Cilantro
Black Tea, plain

Spicy African Peanut Stew Recipe:
Found this super easy, filling and yummy slow cooker recipe while flipping through Peas & Thank You, by Sarah Matheny:
I made just a few changes, based on what was in the kitchen and personal preference:
-I used Low Sodium Chicken broth (instead of Vegetable Broth)
-I used canned Whole Italian Plum Tomatoes (which I broke up in the stew, instead of using Fire Roasted tomatoes)
-I did not use any sweetener (as opposed to the recipe which recommends Stevia; it totally did not need it!)
