Daily Tidbit: I never would have imagined that Ginger in Cereal would be good, but actually it's awesome and I love it! Just another of my fav Trader Joe's treats: Ginger, Almond & Cashew Granola Cereal (pictured here). Ginger can actually be enjoyed in all sorts of ways: in Salads, Desserts, Drinks, Soups, Pastas...and used in recipes for Breakfast, Lunch, Dinner and Dessert! Ginger, Almond & Cashew Granola Cereal |
Breakfast: Bowl of Ginger, Almond & Cashew Granola cereal
1 cup Ginger Granola cereal
1 cup Fat Free Milk
5 oz OJ
Regular Coffee, with a splash of Fat Free Milk & 1/2 tsp Plain Ground Cinnamon
Lunch: Spicy African Peanut Stew
Spicy African Peanut Stew (recipe below) + 3 tbsp Quinoa & Cilantro
Diet Coke

Spicy African Peanut Stew Recipe:
Found this super easy, filling and yummy slow cooker recipe while flipping through Peas & Thank You, by Sarah Matheny:
I made just a few changes, based on what was in the kitchen and personal preference:
-I used Low Sodium Chicken broth (instead of Vegetable Broth)
-I used canned Whole Italian Plum Tomatoes (which I broke up in the stew, instead of using Fire Roasted tomatoes)
-I did not use any sweetener (as opposed to the recipe which recommends Stevia; it totally did not need it!)
Cheeseburger Pie Story & Recipe:
So I bought a box
of Bisquick to make pancakes for the kids about a year ago and we saw this recipe on the
box called "Cheeseburger Pie" that we decided to try. I tweaked it just little bit to make it a little bit more healthy!
Brown 1 pound of Lean Ground Beef, drain fat or use paper towels to soak up extra fat . Add Salt to taste, 1/2 White Onion, finely chopped, and cook until soft. Then add 1 cup of Peas and cook until hot. Transfer to an oven safe, greased pie plate or casserole dish. Top with 1/2 cup shredded Cheddar Cheese. In a separate bowl mix 1/2 cup of Bisquick, 2 eggs and 1 cup of Fat Free Milk. Pour mixture on top of Beef, Veggies & Cheese and put into oven at 400 degrees for 20-25 minutes.

You can see my pic and their pic are a
bit different! We used less cheese and more veggies. Using 93% lean Beef also makes a large impact on Saturated Fats and Calories for this dish (versus the 80% lean Beef they suggest using). I love making yummy recipes like this more healthy for me
and my family; that way we get the best of both worlds!
