Buffalo Cauliflower

Buffalo Cauliflower Saute

I love Buffalo sauce - love it!  Grew up eating in on Chicken Wings, in Chicken Sandwiches, and in Buffalo Chicken Dip - love it!  But when I realized how unhealthy it is (high in saturated fats, sodium & calories!) I decided to create a healthier version to enjoy with a lot less guilt!   Here are a few recipes I have tried and enjoyed:

My newest experiment, pictured above:  Buffalo Cauliflower!  Buffalo Cauliflower Saute with Eggs to be precise.  Yes.  And yes, it is delicious.  Why?  Because anything covered in Buffalo Sauce is delicious!  Here is the recipe:


Buffalo Cauliflower Saute with Eggs

Buffalo Cauliflower Saute with Eggs Recipe:

1/2 Sweet Onion, chopped
1-2 tsp Canola Oil
1 head Cauliflower (or 1 bag of thawed frozen Cauliflower) 
1-2 large cloves Garlic, chopped
1/4 cup water
1 Tbsp Butter
No Sodium Red Chili Pepper Sauce (or whatever hot sauce you prefer)
2-3 large handfuls fresh Baby Spinach
Eggs


Saute Onion in oil in a Dutch Oven over medium heat.  Meanwhile clean Cauliflower and cut into bite sized pieces.  Once the Onions are beginning to soften, add 1-2 cloves of fresh chopped Garlic.  Stir for 1-2 minutes, until fragrant, then add the Cauliflower to the pot.  Saute until the Cauliflower begins to brown a little, then add the water and cover to cook the Cauliflower to desired doneness.  When the Cauliflower is at desired doneness, remove lid and add Butter & Red Chili Pepper Sauce.  Stir until completely mixed.  Then add 2-3 large handful of fresh Baby Spinach and cover and turn off heat.  While the spinach wilts, heat another pan to cook Eggs as desired (I did mine over easy for this particular meal).  Once Spinach is wilted, mix Veggies all together, plate and then top with Eggs; enjoy!
