Sat. June 2nd

Lunch:  Spinach Omelet with Goat Cheese & Veggies!


Daily Dose:  So many great reasons to drink Coffee...could it also be an Anti-Depressant?  Check out this article from Psychology Today:




Breakfast: Oatmeal with Walnuts
½ cup plain Oatmeal, cooked with Fat Free Milk, in microwave
2 tbsp of plain Walnuts
Plain Cinnamon (a couple shakes on top)
5 oz. glass of OJ
Cup of Coffee, black



Lunch: Spinach & Onion Omelet with Goat Cheese
Served with:
Roasted Yukon Gold Potatoes (Roasted at 425 for 40 minutes in 1 tbsp EVOO, s/p, & dried Rosemary)
Sautéed Brussels Sprouts
Cup of Coffee, black



Snack:  ¼ Cup Dry Roasted, Lightly Salted Peanuts, Glass of Fat Free Milk

Dinner: Dinner Party


-Appetizer:  Cheddar Cheese & Crackers with Roasted Red Peppers, Sliced bread with Creamy Spinach Dip, Kalamata Olives, White Wine


-Salad:  Organic Baby Spinach Salad with toasted Pine Nuts, Dried Cranberries, Sliced Beets and Goat Cheese in a Balsamic Vinaigrette


-Meal:  Baked Spinach Pecan Pesto Pasta with Peas, Red Onions, Artichoke Hearts, White Beans, and Turkey Bacon with Part Skim Mozzarella browned on top, White Wine


Traditional Cannoli

-Dessert: Cannoli filling ‘dip’ served with Cannoli pastry ‘chips’.  I have never had this before, it was sooooooooooooooo good!  Instead of the traditional Cannoli (which is served wrapped up with the filling on the inside like the pic above), this was served like a chips & dip version – DELICIOUS!  White Wine.
