Breakfast:
½ cup plain oatmeal and skim milk, cooked in microwave, topped with:
2 Tbsp. chopped walnuts
½ tsp. plain cinnamon
5 oz. glass of OJ
Cup of coffee, black
Lunch: Salsa Omelet (see pic!)
2 scrambled eggs with cheddar cheese
Topped with 3 tbsp homemade salsa
Served with: sautéed broccoli rabe (sautéed with fresh garlic & EVOO)
½ avocado
Glass of water with lemon
Snack: Unbelievably I did not have a snack again today, however, it is because my hubs is running in a race tomorrow so we are eating early (5:30pm).
Dinner: Shrimp Pasta Veggie Blast
Made with: red onions in EVOO, and garlic, and frozen spinach, frozen peas, canned artichoke hearts, white beans, and cherry tomatoes
Tossed with some pasta & jarred pesto
Topped with shredded mozzarella cheese to broil and brown on top
Served with shrimp & some fresh mozzarella (see pic!)
Glass of red wine
Comment: For this dish I cooked the shrimp separately in a hot pan with some EVOO & a little butter, fresh cut garlic & fresh squeezed lemon juice. I bought the shrimp frozen from Sam's Club, a super affordable way to eat shrimp!
Dessert:
I’ve been eating apples all week for dessert just so I could eat this: a piece of lemon & coconut leftover birthday cake (from my birthday a few weeks ago) YUM. Should have taken a picture!
