Classic Algerian Couscous |
So this is a Classic Algerian Couscous dish, basically a chicken and vegetable stew made with north African spices and chick peas in a tomato & broth based sauce, traditionally served over couscous. This is my husband's plate. However, to avoid filling up on couscous, which is much like pasta, I increase the serving of the veggies slightly, forgo the couscous and eat it in a bowl like a soup, as pictured below.

Breakfast:
½ cup plain oatmeal, cooked in microwave, topped with:
2 Tbsp chopped plain walnuts
½ tsp of cinnamon (no sugar)
5 oz. glass of OJ (orange juice)
1 cup of regular coffee, black
Lunch: Pesto Veggie Blast with Chicken
Last night leftover veggie blast sauté: EVOO, red onion, spinach, artichoke hearts, peas, SDT, garlic, black olives, white beans in a pesto sauce
Plus the following items added to it:
- more white beans
- ½ avocado
- ½ cup off white chicken meat (no skin)
1 tall glass of tap water with freshly squeezed lemon juice
Snack:
1 cup of regular coffee, black
Dark chocolate, Trader Joe’s 72% Cacao (1 whole bar is 1.65oz, but I only ate half!)
Notes: Trader Joe’s is a great place to get good quality food items very affordably; this dark chocolate from Belgium is a great example. And the best way to make coffee or chocolate taste better is to eat them together!
Snack:
1 Plain Hard-boiled egg & tall glass of tap water (this is a great snack because it is so filling!)
Dinner:

½ avocado - I just chopped this up and added it to the bowl with the chicken and veggies.
1 glass of red wine
Dessert:
Nothing. Starting to get a sore throat :( Went to bed early.
