Seasoned Black Beans with Tortillas, Cheddar, Salsa, & Avocado |

Plain Oatmeal with Milk, Walnuts & Cinnamon |
Breakfast: Plain Oatmeal with Walnuts & Cinnamon
1/2 uncooked Plain Oatmeal (cooked in microwave with 1 cup Fat Free Milk)
2-3 shakes Plain Cinnamon
2 tbsp Plain Chopped Walnuts
5 oz. Orange Juice
Regular Coffee, black
Lunch: Friend's house for Lunch!
Delicious Croissant Sandwich with a few thin slices of Serrano Ham and Provolone Cheese with tons of Pita Chips
Decaf Coffee, black
I forgot to take a picture - so the above pic is NOT my actual lunch, but it looks pretty close to the way mine looked (I didn't have an apple though!)

Snack: 1/4 cup Dry Roasted, Lightly Salted Peanuts, Fat Free Milk

1/2 can of Seasoned Black Beans
1 Chicken Tenderloin, chopped (pre-cooked)
2 Soft Corn Tortillas (cut with Kitchen scissors into bite sized pieces)
a sprinkling of Shredded Cheddar Cheese
1/2 cup fresh Salsa (recipe below)
1/2 Avocado, diced
White Wine
So this is pretty much what I ate last night; it was so good I wanted it again! But I also wanted to find a faster way to prepare it, so tonight I put the Black Beans and cut up Corn Tortillas and diced Chicken into a bowl, mixed it all up and microwaved it 2.5 minutes (turning and stirring in the middle). From there I plated it and topped it with the Cheese, Salsa & Avocado and Voila - ready to go without a single pan to clean!
Just as delicious as last night and much faster.
