Mushroom Spinach Scramble for Lunch!

Daily Tidbit: 

"Eat Mushrooms to Improve your Health & Happiness"! 


Frosted Shredded Mini-Wheats with Walnuts

Breakfast: Frosted Shredded Mini-Wheats with Walnuts
1 cup Frosted Shredded Mini-Wheats
1 cup Fat Free Milk
2 tbsp Plain Chopped Walnuts
5 oz. Orange Juice
Regular Coffee, black



Mushroom Spinach Scramble

Lunch:  Mushroom Spinach Scramble with Cheddar
1 cup of Mushrooms, sauteed in Cast Iron (1 cup's worth after cooking!)
2 big handfuls Spinach wilted
2 Eggs, scrambled into Veggies with a little salt
1/4 cup shredded Cheddar Cheese on top
Plain Green Tea, hot


Hummus with Raw Zucchini Slices & Baby Carrots

Snack:  Plain Hummus with Raw Zucchini slices & Carrots (recipe below)


Fresh Homemade Salsa with Avocado & Beans
Organic White Corn Tortilla Chips with Mozzarella Cheese

Dinner: Nachos
Organic White Corn Lower Sodium Tortilla Chips

Part Skim Mozzarella Cheese
Fresh Homemade Salsa (recipe below) with 1/2 Avocado & 1/2 cup Red Kidney Beans
White Wine


Dessert: Apple & Water 


Amy's Plain Hummus Recipe:

Into food processor put:
1 can of Chick Peas (drained/ rinsed)
1 small clove of Garlic
Juice from 1/2 large juicy Lemon
2-3 shakes of Cumin
2-3 shakes of Salt
2 tbsp Tahini
While processing the above stream in 1-2 tbsp EVOO.  If you need more liquid or would like to make a more creamy texture, simply add cold water, 1 tbsp at a time, until you reach your desired consistency.
