Open Faced Turkey Melt on Rye with Sweet Potatoes

Plain Oatmeal with Cinnamon & Walnuts

Breakfast:  Plain Oatmeal with Walnuts & Cinnamon
1/2 cup Plain Oatmeal (uncooked), mixed with 1 cup Fat Free Milk and microwaved
2 tbsp plain chopped Walnuts

3-4 shakes of Plain Cinnamon 
5 oz. Orange Juice
Regular Coffee, black

1 slice of Rye Bread with Arugula Puree & Turkey slices
Above sandwich with Roasted Red Peppers added
Above sandwich with 1 slice of Provolone added

Lunch: Open Faced Turkey Melt on Rye with Mashed Sweet Potatoes
1 slice Rye Bread
1 tbsp Arugula Puree (recipe below)
Several Thin Slices of Reduced Sodium, 98% Fat Free Smoked Turkey cold cuts
2 Roasted Red Pepper slices
1 slice Provolone Cheese, broiled on top of sandwich
Red Onion Slices (on side because I forgot to put them in before the Cheese)
1/2 cup Mashed Sweet Potatoes (recipe below), topped with 1 tbsp chopped Pecans
Green Tea, plain

Balsamic Broccoli Salad with Toasted Pine Nuts

Snack: Balsamic Broccoli Salad with Toasted Pine Nuts
1 cup Broccoli Salad (recipe below)
1/8 cup Toasted Pine Nuts

Water with Lemon


*This was even better today, after sitting in the fridge overnight!

Snack:  3 cups Plain Popcorn (popped in brown paper bag in microwave)

Dinner: Girls Night Out!



Fried Calamari

Appetizer shared 3- ways:  Fried Calamari with Marinara & Lemon Aioli (yes, some had already been eaten when I remembered to take the pic!)


French Dip & French Fries

My Meal:  French Dip with French Fries:  Prime Rib, Provolone, Horseradish Cream, Pickled Peppers, Natural Au Jus for dipping & Fries
Beer Sampler*

I ate every single thing on that plate minus the Pickle.  And, I enjoyed every single bite :)


*This local Brewery has this awesome "Beer Sampler" where you get a little taste of every beer on tap; I love it!  They bring all the beers at one time and put them in order for tasting in little 3 oz servings, it is so cool!  These are the flavors I got to try: Honey Blonde, Amber Ale, Oktoberfest, Chocolate Stout (yes, you read that right!), Bengal Gold IPA, Pumpkin Ale, Black Squirrel.  Super Cool.  And all together it is only 21 oz of Beer (less than having 2 Beer!)

RECIPES:  



Arugula Puree Recipe:
Simply put a couple large handfuls of Arugula into a Food Processor and process while streaming in EVOO until you get desired consistency.  This works great a healthy, flavorful spread for a sandwich!





Mashed Sweet Potatoes Recipe:
Clean, dry and poke holes all over a large Sweet Potato for 4 minutes, turn and do another 4 minutes.  When cool enough to touch, remove skins and cube and throw into a bowl and mash (I used a Masher) with a little Butter, Fat Free Milk and a dash of Maple Syrup.  Top with chopped Pecans and serve!
    



Balsamic Broccoli Salad Recipe:
4 cups Broccoli Florets & 1/2 White Onion, chopped, sauteed in pan with 1 tbsp EVOO for 5 minutes.  Add 1 tbsp Balsamic Vinegar and 1/8 cup Golden Raisins, cover and cook another 5 minutes.  Toss with additional tbsp of EVOO before serving.


I found this recipe in Family Circle Magazine and I tweaked it just a little bit.  It was in the current issue discussing possible side dishes for Thanksgiving.  This was was pretty good after I added in the toasted Pine Nuts!
