Corn Tortilla Quesadilla with Arugula Zucchini Salad for Lunch!

Daily Tidbit:  Tonight I chose to put Yellow Mustard on a late night sandwich to add a little extra flavor without all the fat of Mayo.  Turns out Mustard is not only low fat, but it is full of healthy antioxidants, and is known for reducing the frequency of migraine headaches!  Check it out here:

Frosted Shredded Mini-Wheats with Walnuts

Breakfast: Frosted Shredded Mini-Wheats with Walnuts
1 cup Frosted Shredded Mini-Wheats

1 cup Fat Free Milk
2 tbsp plain chopped Walnuts
5 oz Orange Juice
Regular Coffee, black

Soft Corn Tortilla with White & Black Beans & Salsa
Soft Corn Tortilla with Beans, Salsa & Mozzarella Cheese
Corn Tortilla Quesadilla with Arugula Zucchini Salad

Lunch: Quesadilla & Arugula Salad
2 small soft Corn Tortillas, filled with White Beans, Black Beans, 2 tbsp jarred Medium Salsa & Part Skim Shredded Mozzarella Cheese, microwaved
Large handful Arugula
1/2 raw Zucchini, cut into sticks
1 tbsp Tuscan Italian Dressing with Balsamic Vinegar
(still sipping at my Coffee from this morning!)


So this experiment with the Corn Tortilla Quesadilla was a bust in that it was super messy and I couldn't manage to hold a slice in my hand without everything falling out, so I decided to chop everything up and mix it all together to eat with a fork.  Worked great and tasted great, and it was a lot less messy!

Snack: 4 cups Plain Popcorn (popped in brown paper bag in microwave), Water with Lemon

Snack: Turkey Roll up & Chips
2 thin slices of Reduced Sodium Turkey Cold Cuts wrapped with 1 slice of Reduced Fat Provolone Cheese
Cape Cod Kettle Cooked Lower Fat Potato Chips, roughly 1 servings worth
Regular Coffee, black

Turkey and Havarti Cheese sandwich with Tomato, Lettuce & Yellow Mustard on White Bread

After being in the car many hours I was famished and had to eat again before bed.
