Daily Tidbit: I haven't had Rye Bread in at least decade, but have read in many places that Rye Bread is more nutrient rich and makes weight loss easier than Wheat, my standard default choice. And perhaps best of all Rye has been shown to keep you feeling fuller longer which is always a bonus when you are trying to cut Calories. So, yesterday when shopping I opted for the Rye and tried it today with Chicken, Red Peppers and melted Provolone (pictured above), verdict: delicious!

Plain Oatmeal with Cinnamon & Walnuts |
Breakfast: Plain Oatmeal with Cinnamon & Walnuts
1/2 cup Plain Oatmeal (uncooked), microwaved with 1 cup Fat Free Milk
2-3 generous shakes of Plain Cinnamon
2 tbsp plain chopped Walnuts
5 oz Orange Juice
Regular Coffee, black
Lunch: Open Faced Chicken & Red Pepper Melt on Rye
2 slices Rye Bread, topped with
2 tbsp White Bean Cilantro Dip each (recipe below)
1 Chicken Breast Tenderloin each, halved
Roasted Red Pepper slices (jarred) on both, &
1 slice of Provolone Cheese, divided between both slices of bread
This sandwich combo was a first for me. It was delicious and super filling! I didn't specially make the Bean Dip for the sandwich, it is just what I had in the fridge. I could have just as easily used Hummus or Avocado or another healthy spread to avoid using Mayo.

Spaghetti Squash Pesto with Chicken, Beans & Bacon |
Dinner: Spaghetti Squash Pesto with Chicken, Beans & Bacon
1 cup Spaghetti Squash
1 Chicken Breast Tenderloin, chopped into bite sized pieces
2 tbsp Chicken Au Jus from searing the Chicken with Canola oil & salt (Brown Bits de-glazed with Low Sodium Chicken Broth)
1/8 cup store bought Pesto Sauce

3 Cherry Tomatoes, sliced
1/2 cup White Cannellini Beans
1 piece Turkey Bacon, crumbled
1/4 cup Mozzarella Cheese, broiled on top
1/4 cup Mozzarella Cheese, broiled on top
White Wine
I am seriously in love with Spaghetti Squash right now as I enjoy all my old favorite Pasta dishes without actually eating pasta, and increasing my Veggie intake for the day. Any Pasta/ Spaghetti Squash flavor and texture differences were barely recognizable in this flavorful sauce! YUM.

Into food processor put:
-1 can White Cannellini Beans (drained, rinsed)
-1 small clove Garlic
-1 large bunch of fresh Cilantro
-Juice from 1/4 Lemon
-Salt, to taste
While processing drizzle in 1-2 tbsp EVOO. Process to desired consistency. Serve with Veggies, Crackers, Bread or on a Wrap!
