Baked Veggie Pasta for Lunch

Daily Tidbit:   The above pasta dishes is one of my go-to meals for a weekend lunch because it is quick and easy to sneaks tons of Veggies into it.  If you are looking for a new way to add Veggies to meal, check these ideas out: 



Frosted Shredded Mini Wheats with Walnuts

Breakfast: Frosted Shredded Mini Wheats with Walnuts
1 cup Frosted Shredded Mini Wheats
1 cup Fat Free Milk
2 tbsp plain chopped Walnuts
5oz Orange Juice
Regular Coffee, a shake of Pure Ground Cinnamon & a splash of Fat Free Milk


Baked Veggie Pasta with Avocado

Lunch: Pasta with Veggies
Baked Veggie Pasta, made with Ditalini Pasta, Garlic, EVOO, Broccoli, Peas, Sun Dried Tomatoes, Black Olives, White Cannellini Beans and Spinach tossed with EVOO & Balsamic Vinegar and topped with Mozzarella Cheese and baked
1/2 Avocado, diced
1 cup fresh cut Pineapple


Snack: 8 Dark Chocolate Covered Cherries


Snack:  1/4 cup lightly salted dry roasted Peanuts, Water with Lemon
Decaf Coffee, a shake of Pure Ground Cinnamon & a splash of Fat Free Milk

Snack: 1/4 cup mixed nuts, Water (yes, more nuts about an hour after my first snack!)

Roasted Chicken Dinner with Pulled Pork, Salad and Veggies

Dinner: Birthday Dinner at a Friend's House

-10-12 Club Crackers

-Roasted Chicken
-Roasted Asparagus & Brussels Sprouts & Carrots
-Mixed Green Salad with Tomatoes, Blue Cheese, Peppers in a Vinaigrette
-Pulled Pork
-Squash Casserole 
-3 pieces of Garlic Toast

*I had seconds on the Salad and the Pork and the Squash Casserole - YUM!

Dessert:  Not 1, but 2 pieces of Chocolate Peanut Butter Ice Cream Birthday Cake (no it wasn't my birthday, it was just amazingly good and the birthday girl insisted!)
