Hamburger

Daily Tidbit:  I have not read Eat This, Not That!  yet, but it is on my list!  I like the basic idea of making good choices by knowing more about the things that we eat everyday.  Like today I splurged and took the kids out for lunch and had a Hamburger.   I skipped the Cheese and Mayo to save myself the extra Fat & Calories and guess what?  It was still awesome, super juicy, and thoroughly satisfying.

Cheerios with Walnuts & Smoothie

Breakfast: Cheerios with Walnuts
1 cup Plain Cheerios
1 cup Fat Free Milk
2 tbsp chopped Walnuts
5 oz Strawberry Banana Spinach Smoothie (recipe below)
Regular Coffee, 1/2 tsp Plain unsweetened Cocoa, splash Fat Free Milk

Lunch: Fast Food Burger & Fries!
1 Quarter Pounder Hamburger with Lettuce, Tomato & Extra Red Onions on a bun (No Mayo & No Cheese - amazingly still crazy delicious!)

1/3 Large order of French Fries (me and the kids shared these)
Large Diet Coke

Chick Pea Curry with Cilantro


Snack:  1 cup of Chick Pea Curry with Cilantro leftovers from last night

Snack:  1/4 cup plain unsalted Cashews, Fat Free Milk

Mozzarella Scallion Nachos
Black Beans, Avocado & Fresh Salsa

Dinner: Mozzarella Scallion Nachos with Fresh Salsa 

(Yes, this is basically the same exact meal I had two nights ago....the husband was out and the kids were sleeping and it just sounded too easy and too yummy to not enjoy again!) 

1 Small Toaster Pan of Organic Yellow Corn Lower Sodium Tortilla Chips, toasted with Part Skim Mozzarella Cheese & sliced Scallions

Served with:  Homemade Fresh Salsa (recipe below), mixed with:
1/2 Avocado & 1/2 cup mix of Black Beans (canned, drained, rinsed)   

Red Wine


*I was still hungry after finishing the above, so I went back for a couple more handfuls of Plain Corn Tortilla Chips, which did the trick!

Dessert: 1 Local Red Delicious Apple, Water

RECIPES:


Strawberry Banana Spinach Smoothie Recipe:
Into blender, add:
2 Ripe Bananas
1 cup All Natural Fat Free Vanilla Yogurt
1 cup Strawberries (I used frozen Organic Strawberries, which I thawed in the fridge overnight)
1 packed cup Baby Spinach
Blend and enjoy!    
*So far my whole family loves any Smoothie I make with Spinach in it, as long as there are Strawberries or Pineapple in it too.  It's awesome!

Homemade Fresh Salsa Recipe:

Into food processor put:

1 clove Garlic (process first before adding the remaining ingredients)
1 large handful fresh Cilantro
1/2 Red Onion
1/4 cup Scallions
1 pint Cherry Tomatoes
Salt, to taste

While Processing above items, stream in 1 tbsp EVOO.  Chill in fridge for a couple hours for flavors to meld.
