Spinach Ranch Salad for Lunch

Daily Tidbit:    I enjoyed some Dark Chocolate for snack today - YUM!  Here are 5 Decadent (Healthy!) Chocolate Recipes for motivated chocolate lovers:

Breakfast: Sunflower Seed Crispbread & Smoothie
1.5 Wasa Wholegrain Crispbreads (wanted 2, but this is all that was left!)
1 tbsp Sunflower Seed Butter, divided bt both pieces
5 oz Strawberry Spinach Smoothie (recipe below)  
Regular Coffee, a shake of Pure Ground Cinnamon & a splash of Fat Free Milk

Spinach Ranch Salad

Lunch: Spinach Ranch Salad
1 large handful Spinach, mixed with:

1 Hard Boiled Egg
White Mushrooms
White Beans
Red Onion
Cooled Sauteed Broccoli & Cauliflower
1 tbsp Ranch Dressing
Hot Plain Green Tea

Snack: 1/2 Trader Joe's 72% Cacao Dark Chocolate Bar (.825oz), Water

Cuban Style Black Beans with Peppers & Tortillas


Dinner: Cuban Style Black Beans with Peppers & Tortillas
1.5 cups of Cuban Style Black Beans with Peppers & Tortillas (recipe below), topped with 1/4 cup Sharp Cheddar Cheese
1-2 servings Corn Tortilla Chips with a couple Tbsp jarred Medium Salsa (not pictured - I was still hungry after eating the above!)
Red Wine

Dessert: Local Red Delicious Apple, Water

RECIPES:


Strawberry Spinach Smoothie Recipe:
Into blender put:

1 cup Fat Free All Natural Plain Yogurt
2 peeled Bananas
1 cup frozen/ thawed Organic Strawberries
1 packed cup Baby Spinach    


Blend & serve!

 



Cuban Style Black Beans with Peppers & Tortillas Recipe:
1 can Cuban Style Black Beans, drained and thrown into a hot pan with 2 cups frozen/ thawed Red, Yellow & Green Peppers, 1 tsp crushed Garlic, and 4 Small Soft Corn Tortilla (cut into bite sized pieces), and hot sauce to taste.  Cover and heat through, and serve with Cheddar Cheese!

This was meant to feed two, but after dividing, it didn't feel like enough food for a meal to me.  Next time I would put more Veggies in there to beef it up a bit so I wouldn't have to resort to the Chips and Dip like I did tonight!
