Cheeseburger Pie!

Daily Tidbit:    We found the recipe for "Cheeseburger Pie" on our large box of Bisquick last year and decided to try it out and we all fell in love with it.  Of course I tweaked it a bit by adding lots of Veggies (Peas, Zucchini, & Beans tonight, but I have also made it with Corn & Carrots too).  I enjoy taking a yummy recipe like this and making it just a touch more healthy for me and my family; that way we get the best of both worlds!

Shredded Wheat Cereal with Walnuts

Breakfast: Shredded Wheat & Walnuts
1 cup Plain Shredded Wheat (not frosted/ no sugar!)
1 cup Fat Free Milk
2 tbsp Plain chopped Walnuts
5oz Cantaloupe-Orange Spinach Smoothie (recipe below)
Regular Coffee, 1/2 tsp 100% Cacao Dark Chocolate Cocoa, splash of Fat Free Milk

Lunch: Hard Boiled Eggs,  Crispbread with Hummus & Broccoli Rabe
1 heaping cup Broccoli Rabe (steamed first until soft, then sauteed with EVOO, tons of fresh sliced Garlic, Salt & Red Pepper Flake)

2 Hard Boiled Eggs
1 Multi Grain Crispbread topped with 1 tbsp store bought Roasted Eggplant Hummus
Plain Hot Green Tea

Snack: 
2 Trader Joe's Dark Chocolate Peanut Butter Cups (140 Calories, 2g Protein, 14g Carbs, 8g Fat, 12g Sugar)
Fat Free Milk

Cheeseburger Pie


Dinner: Cheeseburger Pie
1 Large slice of Cheeseburger Pie (recipe below)
Another cup of Broccoli Rabe - just like at lunch - I love this stuff!
Red Wine

RECIPES:

 

Cantaloupe-Orange Spinach Smoothie Recipe:
Into blender put:
2 ripe Bananas
1 cup All Natural Vanilla Yogurt
1 packed cup fresh Baby Spinach
1 cup fresh cut Cantaloupe
1/4 cup Orange Juice
Puree until everything is mixed and serve! 
This Smoothie was super refreshing; we all loved this one!



Cheeseburger Pie Recipe: 
We found this recipe on our large box of Bisquick called "Cheeseburger Pie" that we decided to try, tweaking it a bit by adding lots of Veggies!

Preheat Oven to 400 degrees.
Brown 1 pound of 93% lean Ground Beef , add 1/2 White Onion, 1 cup of Peas,  and 1 cup of some other Veggie (tonight I used 1/2 cup diced Zucchini & 1/2 cup Kidney Beans), cooking until hot.  Add salt to taste.  Transfer to an oven safe, greased pie plate or casserole dish.  Top with 1/2 packed cup shredded Cheddar Cheese.  In a separate bowl mix 1/2 cup of Bisquick, 2 eggs and 1 cup of Fat Free Milk.  Once mixed, pour on top of Beef, Veggies & Cheese and put into oven for 20-25 minutes.
