Girls Holiday Dinner!

Daily Tidbit:    Every December I get together with my girl friends from high school to celebrate the holidays over Dinner.  Everyone brings something and there is always loads of super yummy foods (just a few of them in the pic above)! 

Here are some healthy holiday dinner ideas worth considering if you are having guests over or are heading out for a fun night with good friends and good food:


Shredded Wheat Cereal with Walnuts

Breakfast: Shredded Wheat & Walnuts
1 cup Plain Shredded Wheat (not frosted/ no sugar!)
1 cup Fat Free Milk
2 tbsp Plain chopped Walnuts
5oz Orange Juice
Regular Coffee, sprinkle Cinnamon, splash Fat Free Milk

*Trader Joe's Shredded Wheat Cereal has just 2 ingredients:  Wheat & Vitamin E for freshness.  That is it, nothing else!

Snack:  1/4 cup dry roasted, lightly salted Peanuts
Large Fountain Diet Coke

I was out for a day of shopping and brought my Peanuts along.  They are amazing for quickly satisfying hunger especially when you don't have a lot of time to sit down and eat.  I did however have to go through the drive-thru on my way home to pick up a Diet Coke to recharge my batteries; after 5 hours of shopping I needed it!


Organic Red Quinoa Salad

Late Lunch:  Organic Red Quinoa Salad
1 cup Organic Red Quinoa Salad, tossed with flaked Salmon fillet, Spinach, Avocado, Corn, Tomatoes, Black Beans, Garlic, EVOO/ Lime Juice/ Red Wine Vinegar

Dinner:  Girls Annual Holiday Dinner!

There were lots of yummy looking things, but since I ate a really late lunch, I held off and waited to enjoy the dinner.
Sparkling White Wine

Mexican Meatloaf - Amazing - I need this recipe!
Green Salad with Veggies in a Vinaigrette
1 Slice White Tomato Sicilian Pizza   
Spinach & Ricotta stuffed rolled Chicken Breast
Mashed Sweet Potatoes - YUM
Butternut Squash Macaroni & Cheese with Peas (recipe below)
Sparkling White Wine



Dessert:  1 Super Yummy Chocolate Brownie with Butterscotch Chips - YUM!
