Pina Colada Smoothie with Breakfast!

Daily Tidbit:    My lesson from the last couple days is, if there is food around me I'll eat it!  It is so much easier eating healthy at home when there aren't all that many temptations.  I have enjoyed myself thoroughly over the last couple weeks and have eaten some super yummy meals, but I need to remember Real Simple's Healthy Holiday Eating Strategies to get me through New Years, check it out:

Cheerios with chopped Walnuts
Pina Colada Smoothie

Breakfast:  Cheerios with Walnuts & Smoothie
1 cup Cheerios Cereal
1 cup Fat Free Milk
2 tbsp plain Chopped Walnuts
5 oz Pina Colada Smoothie (recipe below)
Regular Coffee, sprinkle Cinnamon, splash Fat Free Milk

Brunch: Omelet, Bacon, Fruit & Pastry!
2 slices Turkey Bacon

Garlic Onion Herb Omelet with Cheddar Cheese
Blueberries, Strawberries & Pears
1/2 slice Mom's Homemade Banana Bread  
2 thin slices of Pain du Chocolate (Chocolate Croissant - 1 of my favs!)
Small Orange Juice


I ate more Eggs, another 1/2 slice of Bacon, and a second round of the yummy fruit as well!

Snack:  2 oz sliced Extra Sharp Cheddar Cheese with roughly 8 Hint of Salt Wheat Thins
Decaf Coffee, sprinkle Cinnamon, splash 1% Milk

Christmas Leg of Lamb Dinner

Dinner:  Christmas Dinner!

Herbed Dijon Roasted Leg of Lamb, topped with homemade gravy
Mashed Sweet Potatoes (recipe below)
Cauliflower Gratin (recipe below)
1 small Croissant
Spinach Salad with Sunflower Seeds, Dried Cranberries and Tomatoes in a Tuscan Vinaigrette
O'Doul's Amber Ale
 
 
I had another 1/2 Croissant, so buttery, so delicious!

Dessert:  None.  All I wanted was an Apple, but we were all out of them!

RECIPES:

Pina Colada Smoothie Recipe:
 
Into blender put:
 
1 cup fresh cut Pineapple
2 Bananas
1 cup All Natural Fat Free Plain Yogurt
1/2 tsp Vanilla Extract
1/2 cup Fat Free Milk
2 tbsp unsweetened Coconut flakes
 
Blend & serve!

Mashed Sweet Potatoes Recipe:
Microwave 3 large whole Sweet Potatoes until soft.  Remove skins and chop and toss into a large bowl.  Mash (I used a Masher!)  Then add 1 tbsp Butter and 1 tbsp 100% Pure Maple Syrup and salt to taste.  Mix and serve!

Cauliflower Gratin Recipe:
 
Steam Cauliflower in covered pan on stove with a couple tbsp of water until soft, and strain.  Return empty pan to stove and heat 1 tbsp Canola Oil & 1 tbsp Butter until melted.  Add 1/2 Large chopped Red Onion and saute.  After a couple minutes add 2 cloves of Garlic, sliced and 1 tsp Ground Mustard and a couple turns of the Pepper Mill.  Cook for 1-2 minutes then add 1 tbsp Flour and cook another couple minutes.  Then add 1 cup 1% Milk and whisk until the sauce starts to thicken.  Then add 1 cup freshly grated Cheddar Cheese and 1/4 cup grated Parmesan Cheese.  Once cheese melts, add Cauliflower to the dish and mix together.  Put into a broiler safe pan, mash Cauliflower if desired and then top with Panko Crumbs.  Spray Panko Crumbs with a little Canola Oil and then broil dish until the top begins to bubble and brown!   
 
I did not add salt because the Parmesan Cheese is fairly salty by itself.  However, if you don't use Parmesan Cheese, you will most likely need to add a little!
