Pumpkin Pie Smoothie!

Daily Tidbit:  I did it, I  managed to get Pumpkin into a Smoothie - a Pumpkin Pie Smoothie!   Turns out that thick Smoothies like this can help with weight loss because they trick your body into feeling fuller on fewer Calories!  Check it out: 


Shredded Wheat with Walnuts

Breakfast: Shredded Wheat with Walnuts
1 cup Plain Shredded Wheat
1 cup Fat Free Milk

2 tbsp chopped Walnuts
5 oz Pumpkin Pie Smoothie (recipe below)
Regular Coffee, 1/2 tsp Plain unsweetened Cocoa, splash Fat Free Milk


Lunch: Garlic Dip Crispbreads & Brussels Sprouts  
2 Multi Grain Wasa Crispbreads, topped with Garlic Dip (recipe below), topped with:
Plum Tomato slices &
Arugula Greens, served with:  
1 cup Brussels Sprouts (1 pound, steamed and sauteed in EVOO and 1 tsp Butter & salted)
Decaf Coffee, sprinkle Pure Cinnamon, splash Fat Free Milk


Snack: 4 cups Organic Plain Popcorn  (popped in brown paper bag in microwave)


Snack: 1 cup Pistachios in their shells = roughly 1/2 cup Pistachio nuts


Dinner: Mozzarella Scallion Nachos with Fresh Salsa
1 Small Toaster Pan of Organic Yellow Corn Lower Sodium Tortilla Chips, toasted with Part Skim Mozzarella Cheese & sliced Scallions

Served with:  Homemade Fresh Salsa (recipe below), mixed with:
1/2 Avocado & 1/2 cup mix of Black & White Beans (canned, drained, rinsed)
O'Doul's Amber Ale


Red Delicious Apple

Dessert: 1 Local Red Delicious Apple, Water



Pumpkin Pie Smoothie Recipe:
Into Blender put:

1 cup All Natural Fat Free Vanilla Yogurt
2 ripe Bananas
1 cup canned Pure Pumpkin Puree
1 tsp Pure Ground Cinnamon  (If you have "Pumpkin Spice" mixture this would be a good addition too!)
1/2 cup Orange Juice

Blend and serve!


Homemade Fresh Salsa Recipe:

Into food processor put:

1 clove Garlic (process first before adding the remaining ingredients)
1 large handful fresh Cilantro
1/2 Red Onion
1/4 cup Scallions
1 pint Cherry Tomatoes
Salt, to taste

While Processing above items, stream in 1 tbsp EVOO.  Chill in fridge for a couple hours for flavors to meld.

In addition to Garlic, I typically make fresh Salsa with at least 2 types of onions (Red, Green and/ or White) and I also usually add the juice of 1/2 Lime, but tonight I forgot the Lime.  It was still totally delicious so don't worry about not having a Lime if you want to try it out!  The Beans and Avocado make this a really filling meal with the Chips & Cheese, and again, totally delicious!
