1 cup Fat Free Milk
1 cup fresh Blueberries
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, black

Lunch: Salad  & Pizza
Arugula Spinach Salad with Veggies & Egg (recipe below)
1 slice of Whole Wheat Summer Pizza (recipe link below)
Cucumber Lemon Water (recipe link below)




Arugula Spinach Salad Recipe:
Took leftover salad from last night: sliced Peaches, Red Onion, Cilantro, Corn, Pecans, Radishes, Cherry Tomatoes and a dressing made from EVOO & Red Wine Vinegar & Balsamic Vinegar and some 21 Seasoning Salute (a salt free spice blend from Trader Joe's) and some salt.
Added:  mixture of broiled fresh Corn, Zucchini & Red Onion, Carrot slices & 1/2 Hard boiled Egg & 1/2 Avocado (no extra dressing was needed!)

Snack: 1/4 cup Lemon Cilantro Hummus & tons of Baby Carrots


Snack:  1/4 cup dry roasted unsalted Peanuts, Water

Chicken Parmesan & Broccoli Rabe




Dinner: Chicken Parmesan!
3 Chicken Breast Tenders: sauteed in hot pan with Canola oil & browned, then topped with leftover extra homemade Marinara from Margherita Pizza last night (recipe: http://www.foodnetwork.com/recipes/tyler-florence/margherita-pizza-recipe/index.html), Parmesan cheese & Shredded Mozzarella cheese, and put in broiler on low for 8 minutes until cheese browned.  As you can see in the pix I should have taken it out after more like 6 minutes!
1+ cup Broccoli Rabe (sauteed with 1 Garlic clove sliced, 1 tbsp Canola oil, salt & Red Pepper Flake and 3 tbsp of water, covered for 15 minutes, until wilted)
White Wine


Note:  I would normally use EVOO to cook the Broccoli Rabe, however, we ran out of it Friday night.  The Canola Oil worked just fine!  And next time I make this I'll leave it in the broiler for more like 5-6 minutes so it is not so so browned.  Despite that however, it was delicious!  Every bite was full of flavor and I'm looking forward to having this again soon!
