Daily Tidbit: I love using Roasted Red Peppers! They provide such a wonderful flavor to all sorts of dishes. For those of us who buy the jarred variety, here is a list of some of the best:

Breakfast: Bagel & Banana
Bagel Thin with Brummel n Brown

1 mini can of Coke Zero

1 Medium Whole Wheat Wrap with Roasted Red Pepper & White Bean Dip (recipe below)
2 cups of Trader Joe's Low Sodium Butternut Squash Soup topped with a squirt of fresh Lemon
Cucumber Lemon Water
Note: This soup used to be one of our favs. That was before I started making homemade soups - what a difference! Well it is pretty good by canned soup standards and you cannot beat the convenience, but for soup nothing can compare to homemade! Meantime, 1 serving of vegetables is 1/2 cup cooked vegetables, which means I got 4 servings in this one bowl of soup!

Roasted Red Pepper & White Bean Dip Recipe:
Put the following items into the food processor, process & serve:
1 large clove of Garlic
1 can of Cannellini White Beans (rinsed and drained)
2 whole Roasted Red Peppers
juice of 1/2 Lemon
Handful of Cilantro
1 tbsp EVOO
salt, to taste

Snack: 1/4 cup dry roasted, lightly salted Peanuts, Fat Free Chocolate Milk (homemade with organic Chocolate syrup)
Dinner: Nachos with Salsa Bean Dip
Salsa Bean Dip made with:
1/2 cup Red Kidney Beans
1/4 cup Corn
Fresh Tomato, chopped
3 tbsp jarred Medium Salsa
1 tbsp water
Cucumber Lemon Water

Dessert: After last night, how could I?!? So, no. I need to go to store tomorrow and load up on Apples!
