Daily Tidbit: So I didn't have a plan for lunch, so I scanned the pantry and got inspired to try a canned Artichoke Hearts & White Bean dip. I added 4 of my favorite things in the world: cilantro - lemon juice - EVOO - garlic and voila! A yummy dip was made. I threw it on a Wrap for lunch. The result was a super yummy and creamy (Vegan!) sandwich!

Oatmeal with Walnuts & Blueberries for Breakfast! |
Breakfast: Oatmeal with Walnuts & Blueberries
½ cup plain Oatmeal (cooked with Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
2-3 shakes Plain Cinnamon on top
1/2 cup fresh Blueberries
5 oz. glass of OJ
Regular Coffee, black

Artichoke Bean Dip Wrap with Carrots for Lunch! |
Lunch: Super Yummy & Creamy Vegan Artichoke & Bean Wrap
1 Whole Wheat Medium sized wrap, with:
Artichoke White Bean Dip (recipe below)
1/2 Avocado
3 tbsp sliced Red Onions
10 Baby Carrots on the side
Water with Lemon
Amy's Artichoke White Bean Dip Recipe:
In food processor, mix the following ingredients:
1 clove of Garlic
1 can of White Cannellini Beans (rinsed and drained)
1 can of Artichoke Hearts (rinsed and drained)
1 handful of fresh Cilantro
Juice from 1/2 Lemon
1 tbsp of EVOO
Process until smooth in texture - serve and enjoy!

Snack: 1 cup of Red Grapes, 1/4 cup of dry roasted, lightly salted Peanuts, Fat Free Milk
Dinner: Cheeseburger Pie!

Story/ Recipe: So I bought a box of Bisquick to make pancakes for the kids and we saw this recipe on the box called "Cheeseburger Pie" that we decided to try, tweaking it a bit by adding lots of Veggies!
Brown 1 pound of Ground Beef, drain fat (I use paper towels to soak up extra fat as well),
add 1/2 tsp of salt, 1/2 White Onion, 1 cup of Corn, 1 cup of Peas, 1 cup of grated carrots, cooking everything until hot. Transfer to an oven safe, greased pie plate or casserole dish. Top with 1/2 cup shredded Cheddar Cheese. In a separate bowl mix 1/2 cup of Bisquick, 2 eggs and 1 cup of Milk. Once mixed, pour onto beef, veggies & cheese and put into oven at 400 degrees for 20-25 minutes.

You can see my pic and their pic are a bit different! We used less cheese and more veggies, but I enjoy taking a yummy recipe like this and making it just a touch more healthy for me and my family; that way we get the best of both worlds!
