Green Coconut Curry Veggie Blast for Lunch!

Daily Tidbit:  I feel like Coconut Milk often gets a bum wrap because of its saturated fats, but choosing "Light Coconut Milk" makes a big difference in fat and overall calories.  It provides such a nice creamy texture and yummy flavor to dishes like my Green Coconut Curry Lunch (Pic above!)  And, it turns out that Coconut milk can be good for you both inside and out!

And when you have leftovers, here are some ideas of how to use it!


Oatmeal with Walnuts & Blueberries

Breakfast: Oatmeal with Walnuts & Fresh Blueberries
½ cup plain Oatmeal (cooked with Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
2-3 shakes Plain Cinnamon on top
1/2 cup fresh Blueberries
5 oz. glass of OJ
Regular Coffee, black

Green Coconut Curry Veggie Blast!

Lunch: Thai Green Coconut Curry Veggie Blast!  (Vegetarian)
In a hot pan I add the following items:
1 tbsp EVOO
1/4 cup Red Onion
1 Garlic clove, sliced
1/2 cup frozen Corn
1/2 cup frozen Broccoli
1/2 cup frozen Green Beans
1/2 cup frozen Red, Yellow, & Green Pepper slices
1/2 cup frozen Brussels Sprouts
1/4 cup Low Sodium Chicken Broth
I cover the pan and let everything get hot.  Once heated I remove the lid and let it reduce and let the EVOO brown the Veggies.  Once browned I add a little more Chicken Broth to de-glaze the pan and then add:
1 tbsp Thai Green Curry Paste - cook for a couple minutes, then add:
1/4 cup Lite Coconut Milk
1/2 cup Red Kidney Beans
Heat everything and then plate it, and top with toasted Almond slices for a little crunch and additional protein!

*This could easily be made Vegan by omitting the Chicken Broth! I use it for a little added flavor, but Vegetable Broth or water could be used.


Snack:   Tons of Baby Carrots & Water


Avocado, Kidney Bean & Salsa Dip

Cheddar & Mozzarella Nachos!

Dinner: Nachos
1/4 cup of shredded Mozzarella
1/4 cup of shredded Cheddar
Low Sodium Corn Tortilla Chips made with Organic White Corn
Jarred Medium Spicy Salsa (2 tbsp) mixed with 1/2 Avocado & 1/4 cup Dark Red Kidney Beans + 1 tbsp of water
White Wine

Dessert: 1 Crisp Gala Apple!  Water.
