Breakfast: Oatmeal with Walnuts & Blueberries
½ cup plain Oatmeal (cooked with Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
1/2 cup Blueberries
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Lunch: Soup & Sandwich
2 cups of Curry Cauliflower Carrot Soup, topped with crumbles from 3 Corn Tortilla Chips
Roasted Red Pepper Bean Dip on a Medium Whole Wheat Wrap
Water
My kids gave me the idea for the Corn Chip crumbles on the soup (a nice sweet crunchy addition!) when I saw them dipping their Corn Chips into this soup, as well as their White Beans and Cheddar Cheese slices!

Snack: 1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk
Dinner: Indian Spiced Lentils with Chicken
1 bowl (2 cups of the Lentils) with 2 Chicken Breast Tenders with 1 cup of boiled Carrots chopped and added before serving
Water with Lemon

My husband loves Lentils, so I just searched for a slow cooker recipe using them and came across this recipe at the now famous "A Year of Slow Cooking" Blog.
