Avocado (No Mayo!) Egg Salad Wrap with Radishes for Lunch!

Breakfast: Oatmeal with Walnuts
½ cup plain Oatmeal (cooked with Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Avocado Egg Salad Wrap!



Lunch: Avocado (no Mayo!) Egg Salad Wrap
Egg Salad made by mixing the following ingredients in Food Processor:
--2 Hard boiled eggs
--1/2 Avocado
--1-2 tsp EVOO
--Kosher Salt 
Served with Radish slices on Whole Grain Wrap 
Regular Coffee, black

Snack:  1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk

Lemon Cilantro Hummus with Carrots for a Snack!



Snack:
1/4 cup Lemon Cilantro Hummus with tons of baby carrots (way more carrots than are shown in the pic!), Water




Amy's Lemon Cilantro Hummus Recipe: 
In food processor add:  1 large clove of garlic (process this first alone before adding the other ingredients to avoid having big chunks of garlic in the final product!), 1 can of chick peas (drained), 1 tbsp of EVOO, juice from 1/2+ large Lemon, 1 handful of Cilantro, 1 tbsp Tahini, Salt & process.  If you need additional liquid to make the dip more smooth, add cold water 1 tbsp at a time until you get the desired consistency.  Let it sit for a few hours in the fridge.  Serve with whole wheat pita, whole grain crackers, carrots, cucumbers, tomatoes, celery, cauliflower, broccoli etc.  or on a sandwich or wrap, or even tossed with a little pasta & veggies & a little more EVOO for a cool summery pasta dish.

Dinner:  Girls Night Out!


Flash Fried Calamari with Veggies in Sriracha


-App:  Flash Fried Sesame Ginger Calamari 
Served with Shiitake Mushrooms, Scallions, Red Bell Peppers, Sesame Seeds & drizzled with Sriracha (shared with 3 other ladies!)


These were like "Everything" Nachos & YUM!


-Meal:  Sausage & Chicken & Bean Nachos!
Andouille Sausage, Grilled chicken, Red beans, Chick Peas, Jalapenos, Black Olives, Tomatoes, Cheddar & Pepper Jack Cheese
 

Amber Ale
Water

Dessert:  I count my calories from the Fried Calamari Appetizer as my 'dessert' tonight!
