Stir Fry Veggies with Dinner!




Daily Tidbit:  By now you probably have heard about how great drinking tea is for your health, but hopefully you have also heard some of the newly emerging research that shows many benefits to the daily cup of Joe!  I love coffee - 2 cups a day is perfect for me - so I'm always happy reading about another wonderful thing that coffee can do. It can help your memory, curb depression, and may help prevent Alzheimer's!

Breakfast: Oatmeal with Walnuts
½ cup plain Oatmeal (cooked with Fat Free Milk, in microwave)
2 tbsp of plain Walnuts
2-3 shakes Plain Cinnamon on top
5 oz. glass of OJ
Regular Coffee, black

Antipasto Lunch!


I nibbled the carrots, saved the blueberries for 'dessert' and then tossed the rest with Ranch!



Lunch:  Antipasto Lunch
Baby Carrots
1/2 cup fresh Blueberries
Reduced Fat Provolone Cheese roll up with Oven Roasted slice Turkey cold cuts (3 thin slices of Turkey, 1 slice of cheese)
1/2 Vine Ripened Tomato
2 Hard Boiled Eggs
1 tbsp Ranch Dressing
Regular Coffee, black
Water

Snack:  1/4 cup lightly salted mixed Nuts

Turkey Meatballs for Snack!


Snack:  5 mini Turkey meatballs in Marinara, Fat Free Milk

Raw Veggies thrown into hot pan with EVOO
Veggies after 5 minutes on medium high heat
Veggies after 10 minutes on medium high heat
Veggies with Chicken & Beans added
Sesame Chicken Stir Fry topped with Peanuts!


Dinner:  Sesame Chicken Stir Fry Stir Fry made with:  1 tbsp Canola Oil & chopped veggies:  2 Zucchini, 1/2 Red Pepper, 1 Yellow Pepper, 1 cup of Baby Carrots, 1/4 Red Onion.  Added 2 Chicken Breast Tenders & 1 cup of Beans (mixture of Pinto & Kidney).

Recipe for sauce:   In a bowl mix 1 tbsp of each: sesame oil, brown sugar, corn starch and then ½ cup soy sauce and a 1/2 cup chicken broth.  Add to pan and simmer until thickened.  Serve.
Topped plate with 1 tbsp of dry roasted, lightly salted Peanuts
White Wine

Note:  I made this quickly and forgot to add the Garlic Ginger paste that I typically use to make this dish - big difference in the final product.  It is amazing how a little Garlic and Ginger can make such a big impact!   Well it was still good, but not the same and not as good!  If you make this, do yourself a favor and be sure to first saute some chopped Garlic and Ginger in the oil before adding the Veggies.  And also some Red Pepper Flake if you want the heat!  Fresh chopped Scallions are also a nice cool and crispy addition before serving.
