Newman's Own Vanilla Almond Cereal

Daily Tidbit:  I am crazy about Newman's Own Vanilla Almond Cereal.  It was recently introduced to me and I just love the flavor, it is like granola but with way fewer Calories, and less Fat & Sugar!  And it feels kind of nice to be eating a food made by a company that sends ALL its profits to Charity.  When else can you feel this good about buying and eating food?!


Newman's Own shares its profits with Charities like "Feeding America"  which is committed to fighting hunger in the US.  In fact, they have given over $330 Million to thousands of Charities since 1982!  And they have loads of healthy recipes to try at their site as well; check it out:

Newman's Own Vanilla Almond Cereal with Walnuts

Breakfast: Vanilla Almond Cereal
1 cup Newman's Own Vanilla Almond Cereal
1 cup Fat Free Milk
2 tbsp Plain chopped Walnuts
5 oz OJ
Regular Coffee, black

Ham & Mushroom Scramble with Provolone Cheese

Lunch:  Ham & Mushroom Scramble with Provolone Cheese
1/2 Shallot, sauteed in hot pan with 1/2 tbsp Canola Butter
Sliced Mushrooms
2 thin slices of Ham Cold Cuts, chopped
2 Eggs, scrambled in pan with Veggies
Fresh Ground Pepper
Topped with 1 slice of "Reduced Fat" Provolone Cheese
Water with a splash of Lemonade
Regular Coffee, black

I skipped the added salt this time, I figured the Ham provided enough sodium and sure enough I didn't miss it!

Snack: .825 oz Trader Joe's 72% Cacao Dark Chocolate, Fat Free Milk

Snack: 4 cups Plain Popcorn, popped in brown paper bag in microwave for 2.5 minutes, Water with Lime

Dinner: Cheeseburger Pie
2 Slices of Cheeseburger Pie (recipe below)
White Wine


I started off with just one slice thinking that would be enough.  But then of course I went back for a second helping.  I try to start with smaller sized portions and then I leave everything in the kitchen so if I want more I really have to motivate to get back up and walk in there to get it.  Tonight it was worth the trip!

Dessert: 1 tbsp of chopped Pecans, Water

I was going to go for a "No Ice Cream Sundae" with a Banana and Chocolate Syrup and Pecans, but I really wasn't hungry and realized that I was just craving the nuts more than anything.  Eating just the Pecans totally did the trick and gave me something yummy and sweet to finish my day with!

RECIPES:  

Cheeseburger Pie Recipe:
We found this recipe on our large box of Bisquick called "Cheeseburger Pie" that we decided to try, tweaking it a bit by adding lots of Veggies!

Brown 3/4 pound of 93% lean Ground Beef , add 1/2 White Onion, 1 cup of Peas,  and 1 cup of grated carrots, cooking until hot.  Add salt to taste.  Transfer to an oven safe, greased pie plate or casserole dish.  Top with 1/2 cup shredded Cheddar Cheese.  In a separate bowl mix 1/2 cup of Bisquick, 2 eggs and 1 cup of Milk.  Once mixed, pour on top of beef, veggies & cheese and put into oven at 400 degrees for 20-25 minutes.

You can see my pic and their pic are a bit different!  We used less cheese and more veggies, but I enjoy taking a yummy recipe like this and making it just a touch more healthy for me and my family; that way we get the best of both worlds!
