Organic Plain Popcorn for Snack!

Breakfast:  Oatmeal with Cinnamon & Walnuts with Smoothie
1/2 cup plain Oatmeal (uncooked),  microwaved with
1 cup 1% Milk
2 tbsp chopped Plain Walnuts &
2-3 shakes of Plain Cinnamon on top
5 oz Raspberry Spinach Smoothie (recipe below)
Regular Coffee, splash 1% Milk

Green Salad with Clementines, Corn, Zucchini, Brussels Sprouts....


Lunch:  (Whatever was left in the Fridge) Green Salad
1 cup Spinach & Arugula mix, tossed with:

-12 small Brussels Sprouts
-2 small Mozzarella balls, halved
-1/2 cup Corn
-1 Clementine, wedges halved
-1/2 cup Zucchini, diced
-1/4 cup raw Mushrooms
-1/4 cup White Beans
-1 tbsp Balsamic Vinaigrette
-1 tbsp Sunflower Seeds
Water with Lemon
Decaf Coffee, splash 1% Milk

Snack:  1 Hard Boiled Egg

Snack: 4 cups Organic Plain Popcorn (Organic Plain Popcorn Kernels microwaved in folded plain brown paper bag for 3 minutes), 1% Milk

Tortilla Chips, topped with Salsa, Beans & Avocado

Dinner: Tortilla Chip Fiesta!
Organic Stone Ground Blue Corn Tortilla Chips, topped with Homemade Salsa, Beans & Corn with 1/2 Avocado

Dessert:   1 Local Fuji Apple, Water

RECIPES:
 

Raspberry Spinach Smoothie Recipe:

Into blender put:

1 cup All Natural Low Fat Plain Yogurt
2 Bananas
1 cup Raspberries (frozen)
1 large handful Spinach


Blend and serve!

Homemade Cooked Salsa Recipe:

In a warmed pan add:

1 tbsp Canola Oil
1/2 Red Onion, chopped
1 tsp Chili Powder
1 tbsp Cumin
1 can canned Organic Fire Roasted Tomatoes with Green Chilis
4oz canned Green Chilis
1 can Pinto Beans (drained/ rinsed)
1 cup canned Corn (No-Salt Added)

Cover and cook everything together until hot and serve!
