Caramelized Onion Gorgonzola Pizza for Dinner!

Daily Tidbit:  Wheat Germ was not even on my radar until recently a friend gave me a recipe for homemade granola that called for it.  So I picked some up and used it for the first time today in our morning Smoothie.  I only used 1 tbsp (a serving is 2 tbsp),  unsure how it would affect the taste, but it was undetectable.  Tomorrow I'm gonna try 2 tbsp.  

Wheat Germ is a nutritional powerhouse and a great source of Protein, Fiber, Vitamin E, Iron, Omega 3 & Omega 6 Fatty Acids, Folate and lots of other B Vitamins, check it out:

Shredded Wheat Cereal with Walnuts & Smoothie


Breakfast:  Plain Shredded Wheat Cereal with Walnuts & Smoothie
1 cup plain Shredded Wheat Cereal
1 cup Fat Free Milk
2 tbsp chopped Plain Walnuts
5 oz Strawberry Banana Smoothie with Wheat Germ (recipe below)
Regular Coffee, splash Fat Free Milk

Organic White Corn Nachos with Salsa, Beans & Avocado

Lunch: Nachos!
Organic White Corn Tortilla Chips, toasted with shredded Cheddar Cheese, & topped with:
1/2 cup Organic Pinto Beans + 2 tbsp jarred Medium Salsa + 1 tbsp Water & 1/2 Avocado, diced (I mixed the Beans, Salsa & Water together before pouring over Nachos and topping with Avocado)
Decaf Coffee, splash Fat Free Milk

Snack: 1/4 cup lightly salted, dry roasted Peanuts, Fat Free Milk

Caramelized Onion Gorgonzola Pizza

Dinner:  Caramelized Onion Gorgonzola Pizza
4 slices of Pizza (1/2 the Pizza)  
Topped it with a couple drops of Hot Chili Pepper Sauce as well - Delicious!
Water


I wanted to use some Gorgonzola on a Pizza so I did a search and found this recipe at the Food Network site and it worked out great!  I used Red Onions and Organic No Salt added Marinara:

Braeburn Apple

Dessert:  Local Braeburn Apple, Water


*The reason I am able to eat "Local" apples in December & January is that some Apples are able to store well when chilled; Braeburn is one of these varieties: Sweet, Crisp, Delicious!  Our farmer's Market does a great job of keeping these local offerings stocked for us to enjoy through the winter!

Strawberry Banana Smoothie with Wheat Germ Recipe:

Into Blender put:

1 cup All Natural Low fat Plain Yogurt
2 Bananas

1 cup frozen Organic Strawberries
1 cup Orange Juice
1 tbsp Wheat Germ

Blend and serve!
