Sun & Water Salad

Daily Tidbit:   I enjoy Soda, who doesn't?!  In fact I would drink Diet Coke all day long every day, if I could.  But let's face it, there is nothing redeemable about the stuff.  There is nothing healthy in them (except water) and the list of cons to drinking soda gets longer everyday.  It is bad for your heart, bad for your teeth, bad for your weight (yes, even drinking Diet Soda has been linked to gaining weight!) The stuff is just generally bad for your physical health, and it seems our mental health is also affected.  New research now links drinking soda with a higher risk for Depression.  Check it out:

Don't get me wrong.  I haven't banned Soda from my lifeI do enjoy one every now and again, but I consider it a special treat and I savor it because I know it will be a long while before I have another!

Oatmeal with Cinnamon, Walnuts & Cantaloupe Romaine Smoothie

Breakfast:  Oatmeal with Cinnamon & Walnuts with Smoothie
1/2 cup plain Oatmeal (uncooked),  microwaved with
1 cup Fat Free Milk
2 tbsp chopped Plain Walnuts &
2-3 shakes of Plain Cinnamon on top
5 oz Cantaloupe Romaine Smoothie (recipe below)
Regular Coffee, splash Fat Free Milk

Sun & Water Salad


Lunch:  Sun & Water Salad
Romaine lettuce, tossed with fresh Corn cut off the cob, Red onions, 1/4 Avocado, 1/4 English Cucumber & 2 Hard Boiled Eggs, tossed in 1 tbsp Paul Newman's Parmesan & Roasted Garlic Salad Dressing

Decaf Coffee, splash 1% Milk
 

This salad reminded me of the Sun when I plated it, but also, was packed with Produce that has a high water content (Romaine, Cucumbers, Corn); it was super fresh and refreshing!  It definitely felt like 'clean' eating!

Note:  I assumed this salad dressing was "All Natural" because it was the Paul Newman's brand, however, I checked after I had added it to my salad and realized that it had Corn Syrup in it, and other things I didn't recognize.  Just another reminder to check labels before buying.  I am sure this doesn't qualify as "Clean Eating", whoops.

Snack:   1/2 cup of shelled Pistachios (which is approximately 1 cup of Pistachios in their shell), 1% Milk

Salmon with Brussels Sprouts & Roasted Potatoes

Dinner: Salmon with Brussels Sprouts & Roasted Potatoes  
1 fillet Wild Caught Alaskan Keta Salmon (baked with Canola Oil & Salt)
Roasted Yukon Gold Potatoes (also baked with Canola Oil & Salt)
Brussels Sprouts (steamed and sauteed with Canola Oil & 2 tsp Butter)
1 tsp Chili Pepper Sauce
Water

Cantaloupe Romaine Smoothie Recipe:

Into blender put:

1 cup All Natural Low Fat Plain Yogurt
2 Bananas
1 cup fresh cut Cantaloupe
1 packed cup fresh cut Romaine Lettuce
1/2 cup Orange Juice

Blend and serve!
