Avocado Chocolate Mousse with Hazelnut Whip for Dessert:  YUM!

Daily Tidbit:  My friend made an amazing dessert for a group of us last night (pic above) & YUM!  Most of us know how good Avocado is in Guacamole, and in Salads or Sandwiches, but did you know it also rocks for Dessert?  Yeah, it rocks, it was awesome!

Interested?  Here are a couple recipes worth trying out:


Plain Oatmeal with Cinnamon, Walnuts & Flaxseed

Breakfast: Oatmeal with Walnuts & Flaxseed & Smoothie

1/2 cup Plain uncooked Oatmeal, microwaved with
1 cup Fat Free Milk & topped with
1/2 tsp Pure Ground Cinnamon
2 tbsp plain chopped Walnuts
1/2 tbsp roasted Flaxseed
5 oz Pina Colada Smoothie with Spinach (recipe below)
Regular Coffee, 1 tsp unsweetened Cocoa, splash Fat Free Milk  


Roasted Veggie Ricotta Crispbread Sandwiches

Lunch: Roasted Veggie Ricotta Sourdough Crispbread Sandwiches
2 Sourdough Crispbreads (35 Calories each!) topped with Part Skim Ricotta Cheese and sliced Roasted Zucchini & Yellow Squash
Broccoli Raisin Salad (store-bought, made with:  Broccoli, Cauliflower,  Sunflower Seeds, Carrots, Raisins, Dried Cranberries in a Mayo based dressing)
1% Milk 

*To Roast the Veggies, just slice Zucchini/ Yellow Squash 1/4 inch thick lengthwise, put on Silpat or Parchment Paper on Cookie Tin and brush with Canola Oil, season with  Salt and Roast at 425 for about 30 minutes, or until they begin to brown. 


Snack: 20 Plain Almonds, 1% Milk


Dinner:  Girls Night Out!

Tons of Pistachios & Peanuts
Several thin slices of Provolone wrapped Salami
White Wine 

(Yes, I decided to end my month long alcohol detox early - 3 weeks was plenty!)

Vegetarian Sweet Potato Chili
Vegetarian Sweet Potato Chili with shredded Cheddar Cheese

Meal:  2 bowls of Vegetarian Sweet Potato Chili (recipe below) 
topped with shredded Cheddar Cheese
About 6 thin slices Baguette, dipped into an EVOO & Spice mixture
White Wine

Tons of little Sesame Seed Cookies & more Peanuts
White Wine


Pina Colada Smoothie with Spinach Recipe: 

Into blender put:

1 cup All Natural Fat Free Vanilla Yogurt
2 Bananas
1 cup fresh cut Pineapple
1 cup Orange Juice
2 tbsp unsweetened Coconut Flakes
1 large handful Spinach

Blend and serve!


Vegetarian Sweet Potato Chili Recipe:

Put Dutch Oven on Stove on Medium Heat.  Add 1 tbsp Canola Oil and 1/2 large Onion, diced, and saute 5 minutes.  Add 1 Red Bell Pepper, diced, and saute another couple minutes.  Then add 1 tbsp Cumin, 1/2 tsp Chili Powder & 1 tsp crushed Garlic.  Saute until fragrant - 1-2 minutes. 
Then add the following items:

1 large can Whole Tomatoes in juice
1 can Pinto Beans (drained/ rinsed)
2 cans Black Beans (drained/ rinsed)
4 oz can Roasted Green Chilis
1 cup No Salt Added canned Corn
1 large Sweet Potato (first microwave until soft, then skin and chop into bite sized pieces)
1 cup Water

Stir everything together then heat to boiling, reduce heat, partially cover and simmer for 30 minutes.  Serve plain, or with shredded Cheddar Cheese.
