Whole Wheat Veggie Wrap with Salad for Lunch


Daily Tidbit:  Tonight I made Homemade Falafel for the first time and I did it in my Slow Cooker.  I was nervous, but figured it was worth a shot.  Verdict: rave reviews!  We all loved it.  This was a healthy way to cook and enjoy Falafel as they are traditionally deep fried, and the recipe I used only required 2 tbsp oil!

Toasted Oat Cereal with Walnuts & Banana

Breakfast: Joe's O's Toasted Oat Cereal with Walnuts & Banana
1 cup Joe's O's
1 cup Fat Free Milk
1 Banana, sliced
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, black

Lunch: Wrap & Salad
1  Medium Whole Wheat Wrap, stuffed with the following items which were pureed together in the food processor:
1 cup of Roasted Rosemary Yukon Gold Potatoes & Carrots (leftover from last night)
1 cup of White Beans, rinsed & drained
1/4 cup of Ricotta Goat Cheese Dip (recipe below)
1 tbsp EVOO
1 squeeze of a Lemon Wedge
Green Salad with Red Onions & Apples in Champagne Vinaigrette
Water with Lemon
Regular Coffee, black

 
So I was trying to use up the Veggies from last night and the leftover Cheese dip and then added the Beans for Protein and came up with this concoction.  It was better once I squirted the Lemon on it and may have benefited from more cheese (but what doesn't benefit from more cheese!?) but I settled on putting some of the Apple slices from the salad inside the wrap and it added great sweetness & crunch and was super filling.

Snack:  1/4 cup roasted, salted Almonds, Fat Free Milk

Appetizers:  
Salted Pistachios & 1 Tomato Bruschetta Toast
White Wine

Meal:  
Classic Algerian Couscous
Slow Cooker Falafel with Yogurt Sauce (recipe below)
Pasta Salad (recipe below)
Grilled Chicken
Mixed Green Salad with Radicchio, Peppers, Tomatoes, Beets & Cucumbers & Cheese, tossed in a Vinaigrette
White Wine

 
I had a second helping of the Green Salad and seconds of the Grilled Chicken in an effort to fill myself with healthy things before Dessert time!

Sadly, I couldn't stop myself from this - it looked too delicious!  And then I went back for seconds on the "Panda Paw" ice cream which was Vanilla with Peanut Butter Cups and a Fudge Swirl....I'm sure I don't have to tell you that this was simply heavenly...

Ricotta Goat Cheese Dip Recipe:


Slow Cooker Falafel Recipe:
Use this recipe to make these Slow Cooker Falafel (everyone loved them!)  My only changes were that I used half bread crumbs, half corn tortilla chip crumbs because I ran out of bread crumbs and I didn't use Parsley, because we didn't have it.

Yogurt Sauce Recipe:
2 cups of Plain Yogurt, strained to reduce the liquid and thicken it
1 seedless Cucumber, chopped
1 Handful of Fresh Cilantro
Juice from 1 Lime
Mix all ingredients together and marinate 2 hours
Serve the Falafels on a 'bed' of the Yogurt Sauce spread across a plate

Pasta Salad Recipe:
Mixed the following items together:
-Cooked & Cooled Pasta
-1 can White Cannellini Beans (rinsed & drained)
-Black Olive Tapenade (recipe below)
-Fat Free Feta Cheese
-Sun Dried Tomatoes, sliced
-1/2 Red Onion, chopped
-1 can Artichoke hearts, drained
-Juice from 1/2 Lemon
-EVOO to coat the pasta

*I meant to add toasted Almond slices to it, but I forgot!
