Garlic Basil Shrimp for Dinner!

Daily Tidbit:  Our Dinner tonight was a Summer feast, chock full of fresh local summertime produce:  Tomatoes, Corn, Basil, Zucchini....
When things are fresh and in season, no fancy preparations are necessary.  From the Garlic Basil Shrimp (pictured above) to the Raw White Corn Cowboy Caviar (pictured down below), Broiled Summer Zucchini and Yellow Squash and sauteed Spinach, we maximized our Veggie intake for the day!

Toasted Oat Cereal with Walnuts & Banana

Breakfast: Joe's O's Toasted Oat Cereal with Walnuts & Banana
1 cup Joe's O's
1 cup Fat Free Milk
1 Banana, sliced
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, black

So although the dish is called "Couscous" I actually only ate the stew/ sauce that goes on op of the Traditional Couscous dish and in fact did not eat any of the actual couscous grain at all.  What I ended up eating in fact was a bowl full of stewed Veggies in a delicious Tomato North African Spiced broth, loaded with Chick Peas, Carrots, Potatoes, Zucchini & Celery, Paprika & Cinnamon (and no actual couscous grain).  Completely delicious and completely filling!

Snack:  1/4 cup roasted, salted Almonds, Fat Free Milk

Dinner: Garlic Basil Shrimp & Veggies with Cowboy Caviar!
Garlic Basil Shrimp (recipe below)
Sauteed Spinach:  Sauteed in Canola oil with 2 Garlic cloves, sliced & Red Pepper Flake and wilted
Cowboy Caviar (recipe below)
Broiled Summer Veggies:  Zucchini, Yellow Squash, Red Onion & Sweet White Corn cooked in Broiler on High for 7 minutes, turned and broiled another 5 minutes, or until brown
White Wine
Water
Ok, I had 3 more Shrimp than pictured and more of the Cowboy Caviar as well - YUM!!

RECIPES:


Garlic Basil Shrimp Recipe:
I love Ellie Krieger and we all loved this Shrimp!  I followed this recipe to the "T" (which is a rarity!) except that I had to use Canola Oil because we ran out of EVOO earlier in the day.


Cowboy Caviar Recipe:
My awesome cousins from Texas shared this recipe with me last year during a visit and we instantly fell in love.  The full recipe calls for Black Beans also, but I chose not to use them tonight, I wanted the fresh local sweet White Corn (served raw) to be the star of the show.

4 Ears of Raw Sweet White Corn, cut off the cob
1 Avocado
1 Pint of Sweet Grape Tomatoes, sliced
1/2 Red Onion, chopped

Juice from 1/2 Lime
2 tbsp of Red Wine Vinegar
1 tbsp of Canola Oil (we are out of EVOO!)
1 Handful Cilantro, chopped
Salt

Marinate for 1-2 hours and serve!
Though we ate this like a salad tonight, it is also great as a dip or appetizer served with Corn Tortilla Chips!  And it is great with a can of Black Beans mixed in too!
