Slow Cooker Chicken with Figs for Dinner!


Daily Tidbit:  Chicken Thighs are a super affordable meat to add to your shopping list AND it holds up great in a Slow Cooker dish, like the one I made tonight:  Slow Cooker Chicken with Figs (pictured above!)  Succulent and full of flavor!  Obviously to reduce the Saturated Fat it is important to remove the skin, but in many cases you can find it already removed.  I am always looking for delicious and healthy meals that don't cost a fortune.  Here are some more money saving ideas for those of us interested in eating healthy AND affordably:

Toasted Oat Cereal with Walnuts & Blueberries

Breakfast: Toasted Oat Cereal with Walnuts & Blueberries
1 cup Toasted Oat Cereal
1 cup Fat Free Milk
2 tbsp Walnuts
1 cup fresh Blueberries

5 oz Orange Juice
Regular Coffee, black

Pizza & Salad for Lunch

Lunch: Pizza & Salad
1/2 slice of Plain Pizza
Spinach Salad with Strawberries, Pecans & Mushrooms with Ranch Dressing
1/2 Avocado
1 slice of Egg & Potato Frittata
1 cup Diet Coke, on ice
Regular Coffee, black

Snack: 1/4 cup dry roasted, lightly salted Peanuts, Fat Free Milk

Salmon Saffron Sweet Potato Stew

Snack: 
1 cup of Salmon Saffron Sweet Potato Stew (recipe below)
Water

Dinner: Slow Cooker Chicken & Figs & Salad
1 Bowl of Slow Cooker Chicken & Figs  (recipe below)
10 steamed sliced Baby Carrots, added to Chicken & Figs
2 Plates of Spinach, Strawberry, Pecan, Mushroom, Tomato Ranch Salad
Red Wine

Dessert:  
2 Dziriate Cookies (Info &Recipe below) 
Water

RECIPES:


Slow Cooker Chicken & Figs Recipe:
Into Slow Cooker put the following items:
1 tbsp EVOO
2 Garlic cloves, sliced
2 tsp Curry Powder
salt/ fresh ground Pepper to taste
Mix the above, and then add:
2 White Cooking Onions, sliced very thinly
4 Chicken Thighs (removing skin beforehand, leaving bones in tact) seasoned with salt/ pepper
1 package of Dried Figs
4 cups of Low Sodium Chicken Broth

Cook on LOW for 6 hours.  Add 1 bag of frozen Sweet Peas & cook another hour and Serve!  


This dish is delicious over Couscous or Rice or Pasta and the sauce is perfect for sopping up with Bread.  I of course chose to eat it like a stew, without any of those things, to avoid the unnecessary simple sugars and simple carbs (You've probably already seen that I saved my carbs for Dessert tonight!)  You could enjoy it with a 1/2 cup of whole grains however, and still maintain the healthfulness of the meal.  I chose to add Steamed sliced Carrots to mine and it was a wonderfully sweet and healthy complement to the dish!
