Slow Cooker Amber Ale Chicken with Fresh Salsa, Corn Tortilla "Croutons" & Avocado


Daily Tidbit:  I grew up eating and loving Croutons in my salads.  Of course over the last couple years I finally gave up this habit, realizing I didn't need more bread in my life (one of the many changes that helped me drop pounds!)  But they add such a nice crunch on salads and in other dishes so I wanted to find something to create the same crunchiness.  One good option I discovered was Corn Tortilla Chip "Croutons".  You know, all the little broken pieces at the bottom of the chip bag?  Why throw them out when you can use them like I did in the pic above?  They add wonderful flavor and texture along with their crunch.  They are also great on top of Tex Mex style salads, Veggie Soups and in baked casseroles as well!

Breakfast: Oatmeal with Walnuts & Banana
1/2 cup Plain Oatmeal cooked in Microwave in Fat Free Milk
2-3 Shakes of Plain Cinnamon
1 Banana, sliced
2 tbsp Walnuts
5 oz. OJ
Regular Coffee, black

Lunch: Slow Cooker Amber Ale Chicken, Fresh Salsa, Corn & Tortilla Chip "Croutons"
1 cup of Slow Cooker Amber Ale Chicken (recipe below)
1/2 cup of Fresh Salsa (recipe below)
1/2 cup of No Salt Added Canned Corn
1/2 cup of a mix of White & Yellow Organic Lower Sodium Corn Tortilla Chip "Croutons"
1/2 Avocado
Water
Regular Coffee, black

Snack:  1/4 cup roasted, salted Almonds + 1/2 oz 72% Dark Chocolate
Fat Free Milk

Fresh Salsa, Bean, Corn & Chicken Dip

Dinner:  Girls Night Out!  
 
Appetizer: Chips & Dip
I brought this dip to share and managed to use up the end of the yummy Slow Cooker Amber Ale Chicken by mixing in Kidney Beans, Corn & the last cup of my fresh Salsa as well.  It ended up being more of a Salsa Dip with highlights of Chicken, Corn and Beans and went well with Tortilla Corn Chips.

Dinner: Awesome Grilled Steak Dinner with Veggies
Grilled Steak (as pictured, plus a couple more slices!)
1 link of Grilled Pork Sausage (not sure why it didn't get into the picture, but then I ended up having a 2nd link of Sausage because it was so yummy and it is a special treat that I never make at home!)
Spinach Goat Cheese Frittata
Grilled Onions & Green Peppers
Cucumber & Sesame Oil Salad
Sauteed Zucchini with White Beans & Tomatoes in Garlic
White Wine
Water


This was an awesome meal that my awesome friend made using Veggies out of her own garden!  Is there any better way to enjoy a summer evening then with friends and fresh delicious food that was grown only a few feet from the dinner table?!  It doesn't get any more "Local" than this!
