Colorful & Fruity Rainbow Summer Salad! |
Daily Tidbit: I didn't set out to make a Rainbow Salad tonight, but that is what happened! Eating lots of different colored Veggies & Fruits helps expose the body to a great variety of nutrients & vitamins. Here is a great link which lists Veggie/ Fruit options by their color group:

Toasted Oat Cereal with Walnuts & Strawberries |
Breakfast: Joe's O's Toasted Oat Cereal with Walnuts & Strawberries
1 cup of Joe's O's Toasted Oat Cereal
1 cup of Fat Free Milk
1 cup of Fresh Strawberries
2 tbsp Walnuts
5 oz. Orange Juice
Regular Coffee, black

Lunch: Mushroom Provolone Omelet & Carrots
2 Egg Omelet cooked with 1/8 cup sliced Red Onion, 1 cup sliced Mushrooms, cooked on medium heat with Canola Oil spray and salt/ pepper and then topped with 1 slice of Reduced Fat Provolone Cheese
Handful of raw Baby Carrots
Water with a splash of Low Cal Lemonade (2 tbsp worth)
Regular Coffee, Vanilla/ Carmel flavor, black

Snack: 1/4 cup dry roasted, lightly salted Peanuts, 1% Milk

Snack: 2 Cheese Pizza Bagel Bites (yes, I was giving these to my kids and had to have a couple!)

Dinner: Slow Cooker Amber Ale Chicken with Fresh Salsa & Avocado
1 cup of Slow Cooker Amber Ale Chicken (recipe below)
+ 3 tbsp Fresh Salsa (recipe below)
+ 1/2 Avocado, chopped
Served with: Plate of White Organic Corn Lower Sodium Tortilla chips, toasted with 1/4 cup Cheddar Cheese
Colorful Summer Salad: Green Leaf Lettuce, Red Onion, Strawberries, Mandarin Oranges, Corn, Salted & Roasted Sunflower Seeds tossed in Light Champagne Vinaigrette: 2 times what is shown in the pic above

RECIPES:
Slow Cooker Amber Ale Chicken Recipe:
Into Slow Cooker put: 1 tbsp EVOO, 1/2 White Onion, 2 cloves of Garlic, 1 chopped Green Bell Pepper, salt/ pepper & 6 Skinless, Boneless Chicken Thighs & 1 bottle of Amber Ale. I cooked this on Low for 8 hours, then add 1 can of rinsed & drained Pinto Beans & 1 cup of Brown Basmati Rice for anther 30 minutes. Serve with 1 or more of the following: Fresh Salsa, Fresh Lime Juice, Fresh Cilantro, Avocado, Cheese, and/ or Corn Tortilla Chips (I obviously like to eat it with ALL those things :))
Note: You can omit the beans & rice and just eat the Amber Ale Chicken by itself or with other vegetables or sides.
