Burek served with Dinner!

Daily Tidbit:  Eid Mubarak!  This simply means "Happy Eid", which is the holiday which comes the last day of Ramadan.  The culinary delights of this holiday are aplenty.  For me, this meant enjoying Shorba (a vegetable & tomato based soup), Burek (fried dumplings stuffed with meat and onions), and Chbah el Safra (a North African Chicken dish cooked with Apples & Almonds).  This dish mixes the sweet with the savory, for a complex and delicious meal.  Apricots, Figs, Dates & Raisins are other fruits commonly mixed with meats in savory dishes across the Mediterranean which create healthy and satisfying meals.

Pancake with Berries for Breakfast!

Breakfast: Pancakes!
1 Large Pancake
Topped with:  fresh sliced Strawberries & Blueberries
2 tbsp Walnuts
1 tsp Maple Syrup
5 oz OJ
Regular Coffee, black

Lunch!

Lunch: 
Zaalouk: a cooked Eggplant Salad with Green Peppers & Curry
Green Salad with Beets, Toasted Almonds, Strawberries & Blueberries in a Tuscan Balsamic Vinaigrette
Broiled Zucchini, Yellow Squash, Onions & Corn from last night, mixed with the leftover Sauteed Spinach from last night
Water with Lime


I made Slow Cooker Zaalouk sometime last month, but this was very different.  My mother in law made  a version using Green Peppers & Eggplant with just a little Tomato and Curry and Garlic.  I had 2 more helpings than reflected in the pic; it was delicious!

Snack:  1 oz. of 72% Dark Chocolate with Regular Coffee, black
